Job Description
The Pantry Cook position is responsible for preparing food for patients, cooks, cafeteria, and hospital staff. Cleaning work areas as related to the preparation and serving of food. This position will support food service production at the Alaska Psychiatric Institute (API) in Anchorage, AK.Responsibilities
- Prepares food as indicated by par level sheets and in accordance with both Nutritional Services and Health Department standards.
- Follows standardized recipes to meet nutritional needs.
- Follows preparation sheets and build cards or recipes
- Follows all portion control standards
- Preparing cold food items such as salads, cut fruit, sandwiches and cold deserts.
- Prepare patient snacks according menu cycle.
- Works patient tray line to plate food for delivery to units.
- Setup and breakdown of patient tray line and steam tables.
- Follows dietary restrictions and patient menu selection when serving.
- Responsible for FIFO during meal prep.
- May operate steam tables, dish machine, trash carts, and knives.
- May assist with serving patients in the cafeteria.
- Adheres to all sanitation regulations set by Federal, State, and local municipalities.
- This position is not responsible for the supervision of staff.
- Other duties that are pertinent to the department or unit’s success also may be assigned.
Qualifications
- High School Diploma or GED equivalent.
- Alaska Food Workers Card or ServSafe Certification contingent upon 30 days of hire.
- Must have at least six (6) months of food service experience.
- Must be able to work independently and complete assignments in a timely manner.
- Must be able to abide by NMS and HACCP standards.
- Must pass a fingerprinting background investigation that complies with The Crime Control Act, Child Care Worker Act and the Indian Child Protection and Family Violence Prevention Act.
- Contract requires employees to speak, understand, read and write English.
- At least one (1) year of experience working within a hospital or school cafeteria setting.
- At least one (1) year of working knowledge, training, and usage of food production equipment.
