The primary role of the Operations assistant is to provide comprehensive support and additional coverage in a large and busy Operations department. Primary focus on quality finished food products. The operation assistant is evaluating finished product quality and inspecting prepped products and cooked food before loaded per event. Work closely with the Operations Manager to maintain a balanced, clean, well run back of house. Fully focused on growth, product quality, and catering support, and customer satisfaction.
Required Weekly Work Schedule:
Sunday through Thursday occasional overtime required.
Focus on QUALITY control management of kitchen prep, oven cooked and grilled menu items
Essential Duties and Responsibilities:
Support and execute daily operations of cooking, loading, equipment maintenance, building, and cleaning. Expedite events, ready to hand off to catering staff. Utility player with skills to support all functions in the operations department.
- Expedite all events. Ensure that all events leave on time with proper equipment, supplies, cooked food, and prepped items
- Quality control management including kitchen cold prep, oven cooked, and grilled items
- Responsible to check out loaded trucks.
- Verify quality of finished products including grilled food, oven cooked food, prepped cold items, and loaded equipment before event
- Cross trained to perform operations daily work: including load catering trucks, kitchen prep, cook and grill.
- Daily supervision of dishwashing, van cleaners, facility cleaning and maintenance
- Supervise and maintain cleaning and organization of building/property and catering equipment
- Document all issues with building, fleet of trucks, equipment, then communicate to Operations Manager and fleet manager for scheduled repair/correction
- Serve as weekly Sunday and Monday Operations Leader
Nelson's Catering is locally owned and operated full service catering company. Our production facility is located in Springfield IL.

Required Certifications, Experience, Skills:
REQUIRED Drivers License and Reliable Transportation
- Kitchen Management Certification2 years management experience in high volume production kitchen (prep and cooking)1 year documented experience in offsite cateringAbility to lift at least 40 pounds as neededFollow variety of company recipes
- Ability to stand for extended periods of time
- Good basic math skills
- Problem solving capabilities and organizing abilities
- Excellent time management skills
- Ability to work with minimal supervision
- Use of all kitchen equipment in a safe manner
- Comply with all food sanitation requirements
