Essential Job Duties
· Performs and supervises general food preparation, cleaning, inventory, purchasing and storage of food and other supplies.
· Plans 3-week rotating menus for all meals and snacks accordance with USDA Child Nutritional guidelines.
· Establishes and maintains inventory system for all products and completes weekly orders in a timely manner.
· Checks in all deliveries to ensure accuracy of product ordered, temperature when delivered, and condition of product delivered. When stock is delivered must rotate stock FIFO and ensure all containers are properly labeled.
· Establishes, performs, and maintains schedule for daily, weekly, and monthly sanitation and cleaning. This will be completed partially by FS Supervisor and partially by supervision of requirements to part time FS staff.
· Maintains all required daily, weekly, and monthly inspection logs of equipment, pest control, food temperature, food sample trays, and all other food service area general maintenance.
· Completes and maintains production records for each meal prepared and checks daily for accuracy of production records completed by part time FS staff.
· Completes and maintains daily meal count records for each meal served in accordance with USDA Offer vs. Serve guidelines. Completes edit check daily for accuracy of meal count records completed by part time staff.
· Updates recipe and nutritional facts binders as needed in accordance with USDA standards.
· Completes annual operations assessments, commodity assessments, wellness assessments, DHEC inspection request, and all other monitoring forms in accordance with all USDA timelines.
· Maintain and update USDA HACCP binders annually, and as needed per communication from USDA.
· Establish, coordinate, and participate in wellness program as required by USDA.
· Completes staff schedule and communicate to part time staff no later than Thursday prior to the new pay cycle.
· Standing and regularly lifting (up to 40 lbs.) is an essential function of this position.
· Complete annual USDA training for FS supervisors and communicate training to part time FS staff to meet all USDA compliance requirements.
· Ensure that all part time FS staff completes new staff USDA training requirements when hired, as well as ensuring that existing staff meet annual training hour requirements.
Supervisory Responsibilities:
Directly supervises 5 to 7 part time food service staff. Carries out supervisory responsibilities in accordance with the organization's policies and applicable laws. Responsibilities include training employees; planning, assigning, and directing work.
Required Education, Skills, Knowledge, and Training:
· Extensive knowledge of food preparation and planning in accordance with USDA Child Nutrition guidelines.
· Knowledge of product inventory and purchasing
· Child Nutrition Serve Safe and HACCP training preferred
· Microsoft Office experience required
· Minimum of 1-year supervisory experience
· Must have ability to communicate effectively both orally and written and carry out oral and written instructions
· High School Diploma and three years of progressive experience in the food service field: or any equivalent combination of education, training, and experience that would enable a candidate to acquire the requisite knowledge, skills, and abilities.
