What are the responsibilities and job description for the Executive Chef Korean Food Specialty position at Newrest?
SUMMARY
Newrest is looking to hire an experienced chef skilled in Korean food to join our SLC unit. This individual is responsible for the hot food kitchen, which includes cooking, cleaning, and supervising other cooks where applicable. You will also maintain high standards for food quality. The selected candidate must be able to create menus while considering clients specifications, and train other kitchen members how to execute these recipes.
ESSENTIAL FUNCTIONS :
- Responsible for prep, cooking, clean up and organization of the kitchen area and complete pre-production
- Responsible for sanitation and post-service set-up
- Create the prep list and cook according to list or provide it to cooks
- Prepare meats, fishes, pastas, side dishes and garnishes following recipes carefully
- Roast, fry, steam, grill, bake meats, fishes, vegetables as required by recipes
- Prepare food by cleaning, peeling, mincing, cutting, chopping, mixing portioning, measuring ingredients, packaging and labeling
- Prepare sauces and dressings according to the standards
- Ensure that enough product has been pulled for the day and replenish supplies as needed
- Maintain proper food production records and ensure all equipment is operable
- Ensure all items for assigned stations are present and that functions are prepared, garnished, and ready for other departments
- Maintain good portion control and forecast of production
- Practice proper grooming, personal hygiene and use safety equipment
- Place racks of products in cooling tunnel or any other available waiting area, stored and ready to go
- Ensure kitchen is locked and all items secured; turn off all cooking machines before leaving
- Communicate effectively with kitchen personnel and other departments
- Comply with all company service standards, health and safety procedures as well as food safety requirements
- Help where needed to ensure all kitchen areas are ready for service
- Serve food for staff where needed
- Notify team lead, lead hand, or manager of any maintenance repairs need or unsafe conditions
- Taste and smell prepared food to determine quality and palatability
- Monitor temperature of hot and cold foods through food preparation and service to ensure that established temperature goals are met priority to steam table transfer and maintained throughout meal service
- Train new cooks and other team members in the hot kitchen
- Be diligent, punctual, and reliable
- Perform other duties as assigned
