Requirements

Job Summary:

The Cook II supports Culinary, by providing quality service in food prep and production in accordance with standards and plating guide.

Essential Functions:

• Set up work station with required mise en place, tools, equipment and supplies
• Maintain and strictly abide to sanitation and health regulations
• Check production schedule and pars
• Inform Sous Chef of any supplies that need to be requisitioned for daily tasks
• Transport supplies from the storeroom and stock in designated areas
• Start prep work and production of items needed for the day
• Preps and assists in the prep of soups, meats, gravies, vegetables, salads, and baked goods
• Clean and prepare fruits and vegetables
• Ice down seafood in accordance to procedures
• Produce salads, fruit/vegetable/cheese/meet trays and centerpieces for banquets and buffets
• Preps and executes well-balanced and appealing employee meals
• Prepare amenity orders for Room Service
• Prepare and produce cold menu items for designated F&B outlets
• Prepare all dishes following recipe and yield guides
• Inform Sous Chef on any shortages
• Answer, report and follow executive or Sous Chef’s instructions
• Bring all dirty pots and pans to the pot wash station
• Break down work station and complete closing procedures
• Wrap, cover, vent, and label/date all food items being stored
• Maintains cleanliness and complies with proper food sanitation requirements by properly handling food and ensuring correct storage
• Maintain a complete knowledge of the menu items and specials to ensure the best product is being served to the guests
• Maintain organization, cleanliness and sanitization of work areas and kitchen equipment
  
  

Secondary Functions:

Education & Experience:

• 1-2 years of experience as a line cook, restaurant cook or prep cook
• Certificate in Culinary Arts preferred
• Experience with various cooking methods and procedures
• Familiar with industry best practices
  
  

Physical Demands:

• Ability to work long hours as needed
• Ability to lift 25 lbs.
• Ability to stand for extended periods of time
• Ability to squat and bend
• Ability to work in hot and humid conditions
  
  

Mental Demands:

• Excellent understanding of various cooking methods, ingredients, equipment and procedures
• Impeccable work ethic and excellent organizational, time management, and communication skills
• Attention to detail
• Able to work independently and follow directives from leadership

Salary Description

$20.00 to $23.00 per hour
