What are the responsibilities and job description for the Line Cook position at Nobu Chicago?
Nobu, the world-renowned Japanese Restaurant is searching for motivated and experienced Line Cooks to join our talented Kitchen team. Blending traditional Japanese cuisine with Peruvian and other ingredients and techniques, we provide guests with a unique luxury dining experience. As a pioneer in the upscale restaurant scene, we pride ourselves on strong work ethics and our high standards of dishes and service. Line cooks are expected to prepare high-quality dishes according to our standard recipes and meet the Executive Chef’s specifications.
Responsibilities:
· Ensure the prep station and kitchen are set up and stocked
· Prepare components of each dish on the menu by chopping vegetables, cutting seafood and meat, preparing sauces, sautéing, frying, grilling, etc.
· Maintain cleanliness and comply with food sanitation requirements by properly handling food and ensuring correct storage
· Clean and sanitize cooking surfaces at the end of each shift
· Rotate with other Line Cooks to prepare staff “family” meals
· Maintain complete knowledge of correct maintenance and use of equipment and safety standards
· Maintain and strictly abide by state sanitation/health regulations
Requirements:
· 1 years’ experience in a high-end, fast-paced restaurant
· Open availability - must be available to work dinner shifts, week-ends and holidays.
· Dependable and punctual
· Engage in teamwork and promote a respectful, professional working environment.
· Strong attention to detail
· Works well under pressure and can handle stressful situations
· Accuracy and speed in executing tasks
· Ability to follow instructions and adhere to protocols and rules
· In-depth knowledge of restaurant best practices and cooking methods
· Able to stand and walk for long periods of time (8 hours)
· Able to walk up and down stairs
· Able to carry up to ~50 lbs
· Able to push/pull/open doors
· Able to bend, squat, reach up and lean down
Education and Certifications:
· Certificate in culinary arts or related field preferred.
· Food Handler Card required.
