Description
I. PURPOSE OF POSITION
Accountable for daily set-up and execution of buffet and grill menus and ensures proper presentation of food and timely delivery of product to customers. Assists Sous Chefs in smooth operation of Nooksack Northwood Casino kitchen.
II. REPORTING RELATIONSHIPS
A. Reports Directly to: Sous Chefs, Food and Beverage Manager
B. Supervises Directly: Line cooks, Prep cooks, Dishwashers
C. Other Important Contacts: Food and Beverage Supervisors and Staff, General Manager, Director of Operations, Casino Management, and guests.
III. DUTIES AND RESPONSIBILITIES
A. Prepares and produces buffet and ala carte menu items in an organized and timely manner paying special attention to presentation and food safety.
B. Maintains proper rotation of product following “first in, first out” policy.
C. Assists in the development and monitoring of subordinate personnel.
D. May assign work, discipline and train employees, and recommend wage increases and promotions with direction from Department Shift Supervisor and/or Manager.
E. Promotes compliance of policies and procedures and effective personnel performance while practicing positive employee relations.
F. Provides accurate and timely documentation and reporting of department activities and status.
G. May assist in maintaining and optimizing department material and equipment inventories.
H. Promotes customer and employee service as a priority.
I. Promotes continuous improvement in the performance of the department and its employees.
J. Ensures a professional and neat appearance of department.
K. Maintains a professional and neat appearance and represent the company in a positive manner.
L. Actively promotes an environment conducive to high quality customer service by setting a positive leadership example.
M. Performs duties of subordinate personnel as required.
N. Because of the Casino’s commitment to our guests and customer service, each employee may be expected to perform a wide range of duties from time to time. Such duties may or may not be related to their regular responsibilities.
Qualifications
IV. QUALIFICATIONS
A. Required:
1. Obtain and maintain valid Non-Gaming Nooksack Tribal Gaming Agency License.
2. Obtain and maintain a valid Washington State Food Worker’s Card or an Indian Health Services Food Training Card within 14 days of initial employment.
3. Proper knife handling and knife skills as applied to job duties and responsibilities.
4. A minimum of two years experience in a high-volume kitchen.
5. Must be a minimum of 21 years of age.
B. Preferred:
1. Previous supervisory/management experience.
2. Experience in a gaming/casino operation.
V. WORKING CONDITIONS
A. Works in noisy, hot and sometimes cramped workspace.
B. Fast paced and demanding as business levels require.
C. Routinely uses commercial kitchen equipment such as knives, mixers, ovens, grills, etc.
D. May work in loud, crowded, and cigarette smoke-filled casino environment.
E. Works various shifts and days including nights, weekends, and holidays.
VI. PHYSICAL DEMANDS
A. Stands or walks for extensive periods of time.
B. Lifts and carries objects up to 50 lbs.
C. Routinely makes repetitive motions.
D. May work long or irregular hours.

A. Knowledge of general kitchen operation.
B. Knowledge of proper rotation of foods and food safety.
