What are the responsibilities and job description for the Weekend/Nights Roundsman position at Noonan's Sports Bar & Grill?
A Noonan’s Roundsman (cook) does everything in the BOH to ensure we are giving top quality food to our guests. They achieve this by accurately and efficiently following our set prep recipes and plate specs. They are to monitor, clean, and advise management on the condition of all equipment. They are also responsible for product stocking, rotation, sales flow, and portioning to ensure an adequate supply of food and supplies are on hand to meet daily requirements.
Essential duties:
- Assist in receiving deliveries of food
- Assist in rotation of stocked items in coolers, dry storage and freezers
- Keep kitchen area clean and presentable at all times
- Assist in keeping a list of items needed for stock and prep
- Prepare all food items listed on prep lists and all menus in the allotted time
- Comply with all food and safety regulations
- Familiarity and compliance with all food handling requirements
- Assist in cleaning of all kitchen areas before close of day or shift.
- On occasion, may be asked to fill in a spot when short staffed at events.
- Ability to follow the lean and direction from other managers.
- Always arrive to work prepared for your shift.
Required Knowledge and Skills
- Catering experience preferred
- Must have excellent knife skills with the ability to cut quickly and safely.
- Proper food handling and safety knowledge
- Ability to read, understand, verbal directions and written recipes from chefs.
- Possess a clear understanding of weights and measurements
- Ability to handle a fast pace work environment and keep a steady pace.
- Must be able to stay on feet for several hours per shift
- Must have good organizational, multi-tasking, and time management abilities
Work Environment
The kitchen will be busy and fast paced, must be able to move quickly with every move you make. You will be on your feet for long periods of time, but a shift meal will be provided daily. This is a semi temperature-controlled environment but may be hotter or colder depending on any extreme temperatures outside. Heavy items will be lifted daily, and team lifting is mandatory. Please make sure you have the physicality to thrive in this environment.
What role does your character play?
A Noonans Roundsman, Cook, ensures that each food item is prepared with the highest quality, care, and craftsmanship. Duties include accurately and efficiently cooking batch made food, as well as preparing and portioning food products prior to cooking. In addition, Line Cooks follow all plate specs, portions, best practice guidelines, sanitation, and basic safety in order to produce food of the highest quality.
What will your character be responsible for bringing to the stage?
- Assumes 100% responsibility for the quality, food safety/sanitation, and timeliness of dishes served
- Responsible for being well-acquainted with all menu items, recipes, plating guidelines, and sanitation/basic safety information
- Prepares a variety of food items using knives, electric mixers, immersion blenders, food processors, scales, and portion bags
- Prepares foods for service using a tilt skillet, oven, deep fryer, flame grill, flat top griddle, and range stove.
- Plates all dishes in accordance with our plate spec book, assuring that each item is cooked properly and to specifications before serving
- Completes prep lists requirements on a day-to-day basis
- Shows up on time for scheduled shifts and prepares, stocks, and maintains sufficient levels of food products to assure a smooth service period
- Maintains a clean and sanitary work station and working area
- Handles, stores, and rotates all products properly in accordance with Health Department standards Sanitation guidelines
- Attends all scheduled meetings and brings suggestions for improvement
