As part of the Management team, the Assistant Director of Food and Beverage is responsible for management of the assigned hotel Food &Beverage (F&B) Department. The responsibilities include, but are not limited: Implementation of brand and company standards, department scheduling, staffing, and ongoing management of the F&B team. The Assistant Director of Food and Beverage also oversees all aspects of the food & beverage planning and service, with duties to include menu planning, cost control, preparation and presentation of food and drinks, and adherence to quality and safety standards as well as to brand standards.
Essential Functions:
- Ensures food and beverage standards are executed properly, in both Front and Back of the house.
- Actively participates in Food & Beverage operations during peak times each day
- Maintains a deep understanding of F&B inventory control for food, liquor, beer, wine and all FF&E equipment
- Administrative duties include weekly scheduling of staff to ensure adequate and consistent levels of service, maintaining and monitoring records for inventory, labor cost, food cost and guest service scores as well as health and safety documentation for the facility.
- Audits and maintains all departmental control procedures.
- Controls costs by adhering to standards of operations for forecasting, budgeting, scheduling, payroll control and other expense management systems.
- Ensures employees maintain appropriate certifications
- Oversee the selection, training, discipline and termination of Food & Beverage employees in accordance with hotel policies
Supervisory Responsibility:
Manages through subordinate Supervisors of Food/Beverage delivery functional areas
Work Environment:
Semi-professional environment requiring uniform dress; high level of verbal and written interaction with both internal and external customers.

Requirements:
- 4-6 years’ related experience
- 3 years management experience
