Role & Responsibilities
- Communicate with the next shift operator regarding current product, mix time, maintenance and sanitation issues, scheduled test products, and special instructions from the management team.
- Review the production schedule for timeliness, scheduled changeovers, and record actual dough temperatures.
- Monitor each dough at the Mixatron for variations in the cycle and demonstrate exactness in scaling ingredients for all formulas using the SG scale.
- Keep scoops inside ingredient bins with handles up and lids closed for food safety.
- Follow the "First Expired, First Out" rule for ingredients and communicate with the previous operator before taking over the Pan-O-Mat position.
- Set the program for the proper variety at the CTC panel, verify rounder belt speed, and adjust as necessary to control dough ball placement.
- Maintain cleanliness of rounding bars, clean the flour screen on the Pan-O-Mat, and ensure a steady flow of dough to the dough hopper.
- Ensure there are enough pans on the line and make proper adjustments to the sheeting of dough pieces.
- Verify the flour vacuum is working properly, adjust Mulder belt settings, and visually check dough pieces at the pan shaker.
- Remove finished product from pans, place usable dough pieces in bins labeled "edible," and clear pan jams as needed.
- Maintain general cleanliness and organization of the work area throughout the shift.
- Report mechanical issues to the maintenance department or shift supervisor.
- Store pan carts appropriately, invert top pans, clean electric eyes/reflectors, and leave the work area clean and stocked for the next shift.
- Demonstrate a working knowledge of computers in the mix area and reset alarms as needed.
- Collaborate with other operators to manage ingredient levels for sanitation purposes.
