Job Summary
The Dietary Manager plays a crucial role in overseeing the dietary department within Oak Ridge Care Center. This position is responsible for ensuring that all nutritional needs of residents or patients are met through effective meal planning, preparation, and service. The Dietary Manager will supervise staff, manage budgets, and collaborate with healthcare professionals to develop care plans that align with dietary requirements.
Duties
- Conducts job responsibilities and job descriptions in accordance with the standards set forth in Oak Ridge Care Center policies and procedures, applicable federal and state laws and applicable professional standards.
- Managing daily foodservice operations.
- Ensures that employees receive compliance training and education necessary to perform their job responsibilities.
- Monitors employee performance, and identifying and responding to identified compliance issues.
- Must be able to work cooperatively as a member of a team.
- Keeps confidential all patient information received.
- Assures menu and diets are served as written, including adherence to recipes, correct portion sizes and therapeutic diets, through consultation with the Dietician Consultant.
- Assures proper methods of food preparation are utilized to preserve nutrient content.
- Supervises food production, serving correct food to patients, controlling appearance, temperature, portion size and sanitation.
- Purchase’s food supplies within approved budgets.
- Instructs employees in use, care and maintenance of equipment, housekeeping and safety standards, provides follow-through on proper cleaning and maintenance programs.
- Makes meal rounds and ensures all new admissions are visited.
- Participates in regularly scheduled patient care conferences and follows through on patient dietary problems.
- Demonstrates thorough knowledge of all Dietary Department jobs and assists when necessary to assure smooth operation.
- May need to assume responsibility for some cooking shifts depending on facility census or labor available.
- Assists in the development of dietetic policies and procedures.
- Directs the assignment of the Assistant supervisor.
- Represents dietary department at staff meetings and communicating pertinent information to employees.
- Supervises the receiving and storage of food.
- Maintains a file of standardized recipes adjusted to the proper yield.
- Insures proper maintenance of equipment in cooperation with administrator.
- Controls food and labor costs.
- Participates in employee selection and termination.
- Maintains accurate personnel records.
- Visit’s residents and assists in gathering information on food preferences and giving diet instructions.
- Communicates appropriate information to other members of the health team.
- Follow-up recommendations of the dietitian.
Qualifications
- Proven experience in supervising a dietary department within a healthcare setting
- Strong knowledge of diet types, and food service management.
- Excellent budgeting skills to effectively manage departmental finances.
- Ability to develop comprehensive care plans based on individual dietary needs and health evaluations.
- Strong communication skills for effective collaboration with staff, residents, and healthcare professionals.
- Certification in dietary management or related field preferred but not required.
