The Sous Chef will lead a group of Culinary Leads, Cook 1 Specialist and Cook 2 Specialist in support of food preparation, food service execution and maintaining a healthy and safe kitchen environment. The perfect Sous Chef is extraordinary passionate about high end food services luxury services
- Leading operation and teams to deliver exceptional high quality and modern Mediterranean food programs
- Leading culinary team up to 20 persons
- Scheduling of cooks, culinary leads and dishwashers
- Interview, hire, onboard and train cooks and culinary leads
- Develop, lead and maintain all incident prevention, food safety and sanitation standards and programs
- Cover variety of kitchen stations during service – including expediting
- Ensure that a consistent first-class product of the highest quality is achieved and maintained in all culinary areas, whilst adhering to operational deadlines.
- Interacts with guests to obtain feedback on product quality and service levels - Responds to and handles guest problems and complaints
- To be aware of all financial budgets and goals.
- To ensure that guests are always receiving an exceptional dining experience as per restaurant standards and expectations
- Ensure that all recipes and product yields are accurately costed and reviewed regularly.
- Ensure that all food items are prepared as per standard recipe cards whilst maintaining portion control and minimizing waste.
- Ensure that food stock levels within the culinary department areas are of sufficient quantity and quality in relevance to expected guest volume and function forecasts.
- Create food production forecast
- Ensure that chefs are always in clean, tidy uniforms and are always presentable to be in guest view.
- Ensure that all food preparation equipment is being used safety and correctly and that it is cleaned and maintained.
- Ensure that all culinary operations manuals are prepared and updated.
- Creative planning and correct food preparation for each outlets
- To initiate relevant maintenance reports and work orders supported by the respective follow up of those items actioned.
- To manage associates fairly and take a personal interest in knowing all culinary associates
- 2 Years minimum experience in a similar position
- BA/BS Culinary arts degree or similar or additional experiences preferred
- ACF certified preferred: CSC or CCC or CEC
- Experience with a variety of elegant/high quality Mediterranean food, IE: Spain, France, Italy, Greece, Lebanon, Morocco
- Experienced with leading teams in a fast phased, high volume and elegant a la carte operations
- Experience with menu development
- Ability to create and costing of recipes.
- Experience with ordering food and supplies
- Highly knowledgeable of food, labor and supplies cost management
- Bilingual; English and Spanish a plus
- Exhibits exceptional knowledge and application of various cooking techniques
- Leading teams and operations with top-of-the-class; incident prevention, food safety and sanitation programs
- Food handler ServeSafe certification
- Strong administration skills
- Extraordinary communicator, verbally and written
