What are the responsibilities and job description for the Detention Food Service Supervisor position at Okmulgee County Criminal Justice Authority?
Supervises inmate trustees in the preparation, cooking and serving of inmate meals.
· Interprets menus and menu instructions according to dietary and food service policy.
· Requisitions supplies, receives, stores and maintains necessary inventory to assure uninterrupted food service.
· Trains kitchen trustees in such areas as personal hygiene, sanitation, use and care of kitchen equipment, use of recipes, serving techniques, and personnel safety.
· Inspects kitchens, storerooms, and associated personnel for proper compliance to policy, procedure and related regulations, and reports the results to the Facility Director.
-This position has limited employee supervisory responsibilities, but requires supervision, training, planning, assigning and directing of trustees, while they perform tasks associated within the kitchen department.
