Description
The Chef de Cuisine oversees and manages all aspects of the restaurant at Madison’s. They are active participant in the kitchen work as well as menu development, staff motivation and education, and culinary administrative tasks such as ordering, budgeting, and scheduling.
Responsibilities
- Work closely with the Executive Chef in promoting the company’s culture, mission, and philosophy
- Complete the weekly kitchen schedule, ensuring proper coverage in all areas
- Assist in the development of menus, recipes, portion, and preparation specifications for food outlets while monitoring food cost, ease of execution, and guest demands
- Work as a leader of the kitchen team during and between services. Ensure preparation is complete and execution is seamless. Ensure Sous Chefs and line employees are adhering to their responsibilities and duties. Assist with any kitchen requirements, as needed
- Train existing and new culinary team members on preparation, execution, and plating of all menu items. Empower them to teach others as well
- Maintain order and discipline in the kitchen
- Communicate clearly with all kitchen and front of house teammates to ensure a beneficial and productive working environment beneficial and productive working environment
Qualifications
- At least 5 years’ previous experience working in a kitchen of this capacity is required
- Demonstrated leadership skills require
- Previous supervisory role of at least 3 years is required
- Associate or bachelor’s degree in culinary arts preferred, but not required
