Old Salt Co-op is regenerative agriculture for damn fine Montana meats. Our businesses include a retail meat company, meat processing, restaurants, and an outdoor festival centered around land stewardship, wood fired cooking, and Americana music.
We’re looking to hire an experienced butcher who can work in our small meat processing facility located in Helena, Montana. A larger USDA inspected processing facility is also in the works. Currently we process beef, pork, and lamb carcasses from our partner ranches along with a line of several value added products which include fresh sausage, smoked sausage, and cured meats.

Responsibilities:
- Break quartered hind and front quarters from the rail into primals, while focusing on yield
- Complete and maintain all required HACCP paperwork
- Assist with primal cutting and packaging as needed
- Handle meat safely and maintain a clean processing floor environment
- Clean processing equipment and areas with team to meet USDA/SQF requirements
- Utilize knife skills for retail meat portioning
- Collaborate with team members to ensure efficient production, along with maintaining organized coolers and inventory supply
- Uphold USDA/HACCP food safety regulations and best practices in all processing activities & areas
Qualifications:
- Proven experience carcass breaking, portion cutting for retail/restaurant and value added production
- Experience with adhering to HACCP protocols and paperwork
- Consistent track record of striving to exceed performance based metrics
- Attention to detail with a strong focus on quality of work, yield % and business impact
- Strong communication and team building skills required
- Familiarity with USDA regs, HACCP, SQF and general food safety requirements and managing teams to these standards
Job Type: Full-time
Pay: $19.00 - $24.00/hour DoE (Relocation incentive for the right candidate)
Expected hours: 38 – 45 per week
