The Manager in Training will have the opportunity to learn the processes and values of Old Scratch Pizza while utilizing their previous restaurant knowledge and skills. They will gain hands-on experience in directing and overseeing the daily operations of the restaurant, preparing them to eventually manage all aspects of the restaurant independently. This role provides an immersive experience in a fast-paced environment that prioritizes exceptional hospitality, food quality, and clean operations. The Manager in Training will work closely with current General Managers, Assistant Managers, and the Operations Management Team to meet business objectives and foster a positive work environment. Previous restaurant management experience is a must for this role, and depending on experience, the Manager in Training could potentially move into a General Manager, Assistant Manager, or Traveling Manager position within the company.
As a Manager in Training, a typical day might include the following:
Assist in managing daily operations to ensure smooth functioning and achievement of business objectives
Engage in coaching, mentoring, and training team members to ensure high levels of productivity, efficiency, and customer service
Monitor inventory levels, conduct regular audits, and maintain accurate records to ensure adequate supplies and minimize waste
Uphold and enforce strict standards of food quality, cleanliness, and safety to ensure compliance with health department regulations and company policies
Maintain a positive work environment by resolving conflicts and promoting employee morale and engagement
Assist in managing and maintaining relationships with suppliers, vendors, and contractors to ensure timely delivery of goods and services
Participate in performance evaluations of staff members and provide constructive feedback
Engage with guests to foster relationships and ensure a hospitality-driven experience
Proactively anticipate and manage staffing shortages, food quality, and service issues
Help guide completion of employee tasks
Serve food and beverages to guests with exceptional hospitality
Ensure adequate staffing for fluctuating business needs through scheduling
Learn how to manage food, labor, and operational costs associated with running the business
Attend all scheduled employee meetings and education events
Monitor employee and guest activities to ensure liquor regulations are obeyed
Achieve advanced competency at all roles and stations throughout the restaurant
Confer with directors and owner on strategic planning and business development
Contribute to the development and refinement of the restaurant’s operational strategies
Aid executive team in project discussions to enhance operational effectiveness and guest satisfaction

Job Requirements:
A minimum of 2 years of experience as a manager or equivalent in the restaurant industry
Experience with hiring and training employees, leading a team, and restaurant audits as your main job duty is required
Must be at least 21 years of age
Ability to work flexible hours, including evenings, weekends, and some holidays
Excellent communication, leadership, and customer service skills
Ability to manage a team and delegate tasks effectively
Strong organizational and time management skills
Ability to multitask and handle a fast-paced work environment
Basic computer skills and experience with restaurant POS systems
Ability to work long hours during peak periods

Work Environment:
This job entails frequent exposure to high temperatures and extreme cold. There is frequent contact/immersion of hands in water and sanitation solutions; as well as contact with produce items, dairy products, and frequent allergen-related items such as nuts, citrus, gluten, etc.
Physical Requirements:
The physical demands described here are representative of those that must be met by an employee to successfully perform the essential functions of this job:
Stand and walk for extended periods, as the shift leader will be required to be on their feet for most of their shift.
Bend, stoop, and lift up to 50 pounds, as the shift leader will be required to stock inventory and supplies, and move equipment as needed.
Have good manual dexterity and hand-eye coordination, as the General Manager will be required to operate and use various kitchen equipment and tools.
Have good vision and hearing, as the General Manager must communicate effectively with staff and customers, and monitor the restaurant operations.
It is important that applicants are able to meet these physical requirements to perform the duties of the General Manager in Training. There is substantial repetitive motion of the wrists, hands, and fingers. Must be able to maneuver in walk-in coolers and freezers.
