Position Overview:
The Prep Manager is responsible for efficiently overseeing the prep team and ensuring quality, timeliness, and adherence to all kitchen standards. This role involves managing daily production tasks, maintaining compliance with health regulations, implementing R&D changes, and fostering a culture of accountability and continuous improvement.
Key Responsibilities
Team Management & Oversight
- Supervise and manage the performance of the prep team, ensuring efficient operations.
- Utilize systems like Prep Task Prioritization to allocate tasks efficiently and maximize output.
- Delegate tasks based on skill level and ensure optimal team productivity.
- Execute decisions regarding terminations of prep staff.
- Prepare weekly schedules using company software and monitor employee attendance.
- Train and mentor team members in prep techniques and kitchen safety protocols.
Production Management
- Oversee product preparation to ensure recipes and batch sizes are followed accurately.
- Maintain quality control (QC) systems for all prep items.
- Hold prep leads and cooks accountable for accuracy, efficiency, and adherence to standards.
- Maintain par levels of all prep items and ensure accurate record-keeping for production and ingredient usage.
Collaboration & Communication
- Work closely with kitchen management and chefs to address ingredient needs, shortages, and team performance.
- Facilitate smooth onboarding and execution of R&D changes, including new recipes and process adjustments.
- Communicate effectively with the R&D team and coordinate training for new procedures.
- Oversee the team’s proficiency in newly implemented processes.
Sanitation & Compliance
- Uphold and enforce sanitation policies and procedures.
- Regular inspections of the kitchen are conducted to ensure cleanliness and safety.
- Ensure all equipment and surfaces are properly sanitized and maintained.
- Enforce compliance with food safety, hygiene, and sanitation standards, including adherence to health department regulations.
Required Qualifications
- Language Skills: Fluency in Spanish and English.
- Experience: Minimum of three years in a supervisory role within a kitchen or food production environment.
- Certification: NYC Food Handlers Certification.
- Availability: Must have weekend availability.
