FUNCTION
The Prep Cook supports the kitchen team by preparing ingredients and maintaining a clean and organized work environment. This role ensures that all food preparation tasks are completed efficiently and in compliance with health and safety standards, contributing to a positive guest experience in the gaming facility’s dining operations.

- Prepare ingredients by washing, peeling, chopping, and portioning food items according to recipes and kitchen standards.
- Ensure that all prepared items are properly stored, labeled, and rotated to maintain freshness and prevent waste.
- Assist in setting up and breaking down kitchen stations, ensuring they are clean, organized, and ready for service.
- Maintain cleanliness and sanitation of work areas, equipment, and utensils in compliance with health and safety regulations.
- Assist chefs and cooks with basic food preparation tasks as needed.
- Monitor inventory levels of ingredients and kitchen supplies, notifying supervisors of shortages or replenishment needs.
- Follow all recipes and portion guidelines to ensure consistency and quality in food preparation
- Handle and operate kitchen equipment safely and responsibly.
- Adhere to all food safety and sanitation guidelines, including proper handwashing and use of gloves.
- Assist with receiving and storing food deliveries, ensuring proper handling and storage of perishable items.
- Other duties as assigned.
STANDARDS OF PERFORMANCE
- Available to work when needed, including weekends, holidays, and nights.
EDUCATION, TRAINING, AND EXPERIENCE
- High school diploma or equivalent preferred.
- Previous experience in a kitchen or food preparation role preferred.
- Able to obtain and maintain a valid Kentucky gaming/racing license
