Specialty Asian Junior Chef/Food and Beverage/CHI
JOB PURPOSE:
Specialty Asian Prep Cook (Chinese, Korean, Vietnamese, Thai) is responsible for providing a supportive role to Asian kitchen staff in various food preparation and cooking. Their duties include organizing and labeling food items in storage closets, performing tasks like chopping ingredients and sanitizing their work station during and after service. Also, will assist in menu planning and recipe development, utilizing standard metric recipes, testing products and tasting panel.
QUALIFICATIONS: (Include equipment knowledge/use)
- Minimum four (4) years’ experience of large hotel or similar Casino type operation which includes high volume production
- Previous supervisory experience is preferred
- Experience in Dim Sum, Sushi, and Duck Chef
- Must know how to use a wok and have knife skills
EDUCATION:
- High School Diploma or GED preferred
- Must obtain and maintain a Food Safety Certification within 90 days of employment
LICENSE REQUIREMENTS:
- Obtain and maintain Pala Gaming License
ESSENTIAL JOB FUNCTIONS:
- Responsible for the majority of duties and responsibilities of the chef, such as inventory, kitchen staff management, and food preparation.
- Ensure all team members adhere to culinary standards and regulations
- Complete all tasks, in order, on the prep list from the Head Chef or other kitchen manager
- Track, record and replenish inventory as needed
- Label and stock all ingredients on shelves
- Wash, chop, and sort ingredients
- Measure quantities of seasonings and other cooking ingredients
- Parboil food, reduce sauces and start first steps in various dishes
- Wash and sanitize cooking utensils and cookware
- Throw away garbage
- Sanitize kitchen
- Adhere to all relevant nutrition and sanitary regulations and standards
- Perform other duties as assigned.
PHYSICAL/MENTAL REQUIREMENTS: (*Constantly, Frequently, Occasionally)
- Constantly standing, hearing, seeing, mental alertness, eye/hand coordination and handling.
- Frequently talking, smelling, walking, balancing, reading, bending, reaching, wrist motion, twisting.
- Frequently lifting and/or carrying up to a maximum of 55 lbs. alone, including foodstuffs, pots and pans, for distances up to 300 feet.
- Occasionally stooping and tasting; pushing and/or pulling up to a maximum of 120 lbs. (kitchen carts are utilized to transport as needed).
WORKING CONDITIONS:
- Moderate noise and smoke levels; some odors.
- Work is performed indoors in a climate-controlled environment with occasional hot and cold temperature changes.
- Close spaces while working with others.
- Will be exposed to food odors.
