What are the responsibilities and job description for the Banquet Sous Chef position at Palm Beach Gardens Marriott?
Summary - Assists the Executive Chef in supervising food production for all food outlets, especially banquet events and other functions of the kitchens at the hotel. Assures that quality and cost standards are consistently attained.
Duties - Prepares and supervises kitchen for the daily preparation of soups, sauces and "specials" to ensure that methods of cooking, garnishing and portion sizes are as prescribed by standardized recipes.
Assists Executive Chef with monthly inventories, cost controls, requisitioning and issuing for food production, menu planning and related production activities. Consistently maintains high standards of quality, eye appeal and flavor of foods. Assists in maintaining the security and safety of the kitchen, including equipment, food and inventory supply.
Personally works in any station assigned by the Executive Chef and is the person to report to in the absence of the Executive Chef.
Reports all guest complaints to the Executive Chef and assists in resolving complaints in a professional manner.
Ensures that all employees are treated fairly and with respect.
Salary : $60,000 - $70,000
