Papa San, the innovative new izakaya Peruvian restaurant from the acclaimed Llama Inn group, is looking for a passionate Chef de Partie to join our dynamic kitchen team. This is an exciting opportunity to be part of a groundbreaking culinary concept that beautifully merges Japanese and Peruvian flavors.
About Us:
At Papa San, we celebrate the art of fusion cuisine. Our menu features dishes like:
- Nikkei Ceviche: Fresh fish marinated with aji amarillo and yuzu.
- Miso-Glazed Grilled Chicken: Tender chicken with a miso marinade served with Peruvian-style sides.
- Sushi Rolls: Unique combinations featuring Peruvian ingredients such as avocado and rocoto.
Key Responsibilities:
- Food Preparation:
- Prepare and cook high-quality dishes in your designated section, ensuring all items are executed to the highest standards of taste and presentation.
- Station Management:
- Take ownership of your station, managing inventory and ensuring all necessary ingredients are prepped and ready for service. Maintain cleanliness and organization at all times.
- Collaboration:
- Work closely with the Sous Chef and Head Chef to ensure smooth kitchen operations. Communicate effectively with the team to coordinate service and maintain consistency.
- Quality Control:
- Participate in regular tastings and ensure that all dishes meet our standards for flavor, presentation, and freshness.
- Training and Mentorship:
- Assist in training junior kitchen staff, sharing your knowledge of techniques and best practices related to both Japanese and Peruvian cuisines.
Qualifications:
- Experience:
- Minimum of 2 years in a professional kitchen, with experience in a Chef de Partie or similar role preferred. Familiarity with Japanese and/or Peruvian cuisine is a plus.
- Culinary Skills:
- Proficient in various cooking techniques, including sushi preparation, grilling, and marinating. A keen understanding of flavor profiles from both culinary traditions is essential.
