WHAT WE ARE HUNGRY FOR
As a Lead Baker, you will be responsible for quality food production, controlling food and labor costs, and maintaining safety and sanitation standards. Our ideal candidate will help to achieve our mission to bring expertly crafted baked and brewed goods to our guests.
RESPONSIBILITIES
- Lead in baking and preparing food as necessary to include frying donuts, placing toppings, and decorating pastries and bread as per company recipes; prepare all needed materials and ingredients
- Ensure that product quality, freshness and presentation meet company standards
- General Oven Duties (Checking dough conditioner)
- Scaling and shaping of all breads, loaves, and pastries
- Follow all sanitization procedures, maintaining overall cleanliness of work station and kitchen
- Prioritize and finish all tasks assigned for the daily baking
- Ensure work place is safe and hygienic for all employees and guests
- Receive, stock, and store food in designated containers and storage areas in an organized manner
- Monitor inventory levels and equipment maintenance
- Assist in planning and executing all catering functions in conjunction with the operations and sales staff
- Complete various reports for records such as production, usage, and waste
- Perform other related duties as assigned
WHAT YOU NEED TO HAVE
- Good knowledge (2-3 years) of production methods and organization of bread production in a commercial kitchen
- Knowledge on food producing process, sanitization, quality program
- Knowledge on food producing technique, food microbiology, and food sanitary safety practice/procedure
- Food safety, food labeling, nutrition related knowledge (include FDA)
- Culinary education or certification preferred
- Food Handler’s or Manager Certificate, preferred
- Exceptional organizational and communication skills with the ability to effectively balance priorities and deliver results in a fast-pace environment
- Ability to multi-task and manage multiple priorities
- Ability to work with and lead team members to accomplish daily tasks in an efficient manner
- Ability to lift and move heavy equipment and ingredients
