The Executive Chef is responsible for leading the culinary operations at Hyatt Centric Downtown Portland, overseeing Covet.PDX and the banquet department. This role ensures an exceptional dining experience through innovative menu development, operational excellence, and strong team leadership. The Executive Chef plays a critical role in maintaining Hyatt’s high standards for quality, service, and sustainability while driving financial performance.

Key Responsibilities

Culinary Leadership & Operations

  • Develop and execute seasonal, locally inspired menus for Covet.PDX and banquet events, reflecting the brand’s identity and guest preferences.
  • Maintain consistency in food preparation, presentation, and service, ensuring exceptional guest experience.
  • Oversee all kitchen operations, including food preparation, cooking, and execution across all outlets.
  • Maintain high standards of cleanliness, sanitation, and compliance with health and safety regulations.
  • Monitor food costs, portion control, and waste reduction to drive profitability.
  • Ensure all food items are sourced responsibly, prioritizing sustainability and local partnerships.

Team Management & Development

  • Recruit, train, and mentor culinary staff, fostering a culture of excellence and teamwork.
  • Lead by example in professionalism, creativity, and adherence to brand standards.
  • Conduct regular performance evaluations and provide feedback to enhance skills and efficiency.
  • Develop and implement training programs to ensure continuous professional growth of kitchen staff.
  • Work collaboratively with front-of-house leadership to create seamless service experiences.

Banquet & Event Execution

  • Work closely with the Sales & Events team to develop custom menus and execute high-quality banquets and catered events.
  • Ensure flawless execution of events, from plated dinners to large-scale receptions.
  • Manage banquet production schedules and staffing to ensure efficiency and quality.
  • Innovate banquet offerings to align with industry trends and guest expectations.

Financial & Strategic Management

  • Develop and manage the culinary department’s budget, controlling labor and food costs while maintaining quality.
  • Analyze financial reports and performance metrics to drive continuous improvement.
  • Work collaboratively with hotel leadership to support overall property goals and guest satisfaction.
  • Ensure compliance with all Hyatt brand standards, state regulations, and safety protocols.

Qualifications & Skills

  • Minimum of 5 years of culinary leadership experience
  • Degree or certification in Culinary Arts or equivalent professional experience.
  • Proven expertise in menu development, cost control, and kitchen management.
  • Strong leadership, team building, and communication skills.
  • Ability to work efficiently in a fast-paced, high-volume setting while maintaining attention to detail.
  • Knowledge of food safety, sanitation, and workplace safety regulations.
  • Passion for culinary innovation and commitment to excellence.
