Perle Restaurant is looking to hire a Chef de Cuisine.

Located in the heart of Old-Town Pasadena, Perle has quickly earned a distinguished reputation, being recognized by the Michelin Guide annually since its opening five years ago. Perle is helmed by a Michelin-trained Chef/Owner Dean Yasharian, with world-renowned experience in kitchens across NYC and Europe, including with legendary chefs Daniel Boulud, Gordon Ramsay, and Daniel Clifford.

At Perle, we celebrate the artistry of modern French cuisine with an emphasis on creativity, precision, and the finest ingredients. We seek an experienced Chef de Cuisine who can lead our kitchen team to continue delivering exceptional culinary experiences while maintaining the excellence and consistency our guests expect.

Duties and Responsibilities:

  • Kitchen Leadership: Manage all aspects of the kitchen’s operations, including overseeing food preparation, cooking, plating, and presentation. Lead by example to maintain the highest culinary standards.
  • Team Management: Supervise, motivate, and train the kitchen staff to ensure seamless operations. Oversee staffing schedules, breaks, and promote professional development.
  • Menu Development & Innovation: Collaborate with the Chef/Owner to create and refresh the menu regularly, incorporating seasonal ingredients and new culinary trends while maintaining consistency with Perle's distinct style. 
  • Quality Control: Monitor food quality throughout service, performing regular line checks to ensure consistency in taste, presentation, and portioning of all dishes. Ensure adherence to food safety and sanitation standards.
  • Inventory and Ordering: Oversee inventory management, ensuring proper stock levels, accurate ordering, and minimizing waste. Work closely with suppliers to source the best ingredients while maintaining cost controls.
  • Cost Management: Monitor food costs, waste reduction, and labor expenses to meet budgetary goals. Track and report key metrics, including food cost percentages and labor efficiency.
  • Health & Safety Compliance: Enforce and maintain strict hygiene and safety standards in accordance with local regulations. Ensure the kitchen is regularly inspected and maintains a top-tier Health Department rating.
  • Collaboration & Communication: Maintain a collaborative relationship with the Front of House (FOH) team to ensure smooth operations during service. Act as a liaison between BOH and FOH, ensuring effective communication regarding special requests, timing, and food preparation.
  • Continuous Improvement: Stay informed about industry trends, sustainable practices, and new culinary techniques to keep Perle at the forefront of the fine dining scene.

Requirements:

  • Proven Leadership: Extensive experience in managing a kitchen, ideally in Michelin-recognized or fine-dining establishments, with the ability to lead a dynamic team.
  • Culinary Expertise: In-depth knowledge of French cuisine and techniques, with a passion for creating innovative, high-quality dishes that delight guests.
  • Operational Efficiency: Strong organizational skills with the ability to maintain kitchen efficiency, manage inventory, and reduce waste while adhering to financial goals.
  • Strong Communication Skills: Ability to communicate clearly and effectively with both the kitchen and service teams to ensure smooth operations and exceptional guest experiences.
  • Attention to Detail: Strong focus on quality, consistency, and presentation. High standards in food preparation and kitchen cleanliness.
  • Health & Safety Knowledge: Thorough understanding of food safety protocols, sanitation, and local health regulations.
  • Flexibility: Willingness to work evenings, weekends, and holidays as necessary, with the ability to adapt to the restaurant's evolving needs.
