Pinehurst Country Club is currently recruiting for a culinary expert as a Chef de Partie!
Responsibilities:
Station Management:
  • Oversee the daily operations of their designated station, ensuring that the preparation, cooking, and presentation of dishes meet the standards set by the head chef.
  • Coordinate with other chefs and kitchen staff to ensure smooth service and proper flow of food preparation.
  • Ensure all kitchen tools, equipment, and appliances at the station are in good working order.
Food Preparation and Cooking:
  • Prepare ingredients and dishes according to menu specifications, recipes, and portion control standards.
  • Cook food to order, ensuring consistency and high quality in every dish.
  • Monitor cooking times and temperatures to ensure food is cooked to perfection.
Quality Control:
  • Ensure all dishes leaving the station are up to standard, both in terms of presentation and taste.
  • Taste and inspect food before it leaves the kitchen to make sure it meets the restaurant's quality criteria.
Stock and Inventory Management:
  • Keep track of inventory for their specific station, ensuring that there are enough ingredients for service without overstocking.
  • Work with the sous chef or head chef to order supplies and manage stock rotation (FIFO – First In, First Out) to minimize waste.
  • Ensure proper storage of ingredients to maintain freshness and reduce the risk of contamination.
Team Leadership:
  • Supervise and mentor junior kitchen staff, such as commis chefs and kitchen assistants, helping them develop their skills.
  • Organize and delegate tasks within their station, ensuring that service is efficient.
  • Maintain a clean and safe working environment, adhering to health and safety regulations.
  • Ensure that staff within the station are following kitchen protocols and practices.
Health and Safety Compliance:
  • Ensure that food safety guidelines are adhered to, including safe food handling, hygiene, and cleaning practices.
  • Monitor the cleanliness and safety of the kitchen station, making sure that the team follows sanitation protocols at all times.
Communication:
  • Maintain clear communication with the head chef, sous chefs, and other chefs de partie to ensure that the kitchen runs efficiently.
  • Take direction from senior chefs and communicate any issues or needs with ingredients or equipment.

Maintain High Standards:
  • Always aim for consistency, quality, and attention to detail in every dish prepared.
  • Be proactive in identifying potential problems in the kitchen and act to resolve them before they affect service.
Efficiency and Time Management:
  • Manage time effectively to ensure that all tasks are completed within the allocated time frames, especially during busy service hours.
  • Prioritize tasks and remain calm under pressure, especially during peak hours.
Develop Knowledge and Skills:
  • Continuously improve culinary skills and knowledge of cooking techniques, kitchen equipment, and food trends.
  • Stay updated on any changes to the menu, ingredients, or cooking techniques.
Teamwork:
  • While the Chef de Partie is responsible for their station, it’s crucial to maintain good relationships with other kitchen staff to ensure smooth communication and coordination.
  • Be willing to step in and help other stations when necessary to ensure the kitchen runs efficiently.
Personal Hygiene and Professionalism:
  • Maintain cleanliness and hygiene standards at all times.
  • Present yourself professionally, as you are not only representing your station but also the overall image of the restaurant.
Adaptability:
  • Be flexible and able to work in different areas of the kitchen when needed.
  • Adapt to changes in the menu, cooking methods, or kitchen organization as the head chef or sous chef sees fit.
Handle Stress and Pressure:
  • The kitchen can be a high-stress environment, especially during busy shifts. A Chef de Partie must be able to manage stress, keep a level head, and continue working efficiently.
Skills and Qualifications:
  • Culinary Knowledge: A deep understanding of culinary techniques, knife skills, food safety, and plating.
  • Leadership and Communication: Ability to lead and communicate clearly with the team.
  • Physical Stamina: Kitchens are fast-paced environments, and a Chef de Partie must be able to stand for long hours and work in hot conditions.
Attention to Detail: A keen eye for detail is essential, especially for presentation and food quality
Wage is $25.00 per hour
