SUMMARY :
Follow established procedures. Clean and sanitize on a scheduled basis the full range of production equipment and facilities to meet inspection standards. Set up equipment per Production Schedule.
ESSENTIAL DUTIES AND RESPONSIBILITIES INCLUDE THE FOLLOWING. OTHER DUTIES MAY BE ASSIGNED.
- Remove machine guards and accessories.
- Disassemble, clean and sanitize completely an array of chocolate production equipment : Bindler, Sollich, Kitchen, and Wrapper areas.
- Take all parts steam room, and reassemble all parts after cleaning, and deliver to proper area.
- Set up equipment per the production schedule.
- Follow approved standards for change over when schedule requires, such as change program plates, remove chocolate from depositors, and hose down entire area.
- Shut down pump in reclaim tank, then change filter screens.
- Scrape off rails, clean pans, tower blades, wipe machinery and blow off the lines.
- Change cups and "O" rings on all pistons in depositors and other PM items as needed,
- Blow excess chocolate and wipe machines clean, then dry.
- Responsible for cleaning, sanitize and maintain a variety of product and material handling equipment such as nut depositor, and general daily cleaning : buckets and drums, waste containers, carts, belts on line, etc.
- Knowledge and operation of touch pads on depositors on the Bindler line.
- Knowledge to run CIP and COP systems ADDITIONAL DUTIES :
- Maintain a supply of melted white chocolate and bottom coat in the pony and horizontal tanks
- Packaging area is cleaned when lines are down, general housekeeping, in all areas.
- Hose down floors and mop in all areas.
- Knowledge of chemical use and ability to complete required annual chemical training certification.
- Responsible in all areas to weigh and record all discard; label all drums and move all scrap from the facility.
- On a scheduled basis, clean walls, overhead beams, pipes, lights, refrigerators, duct work, cardboard bailing, recycling, trash in parking lot and non-working areas as required.
- Maintain packaging room by replacing air filters and cleaning grates.
- Perform mould washing procedures.
- Daily cleaning items from master sanitation schedule, per Lead, Supervisor or Manager.
- Follow all Sanitation Standard Operating Procedures (SSOP), Policies, and GMP's.
- Assure adherence to Food Safety Requirements and Work Instructions.
- Train new employees as required.
- Comply with all safety policies, report safety violations, and attend safety meetings.
- Performs other related work duties as requested by leader or supervisor.
- Required to work until end of shift daily as requested by supervisor.
- Report problems regarding food safety to Supervisor or Manager.
SUPERVISORY RESPONSIBILITY : None
WORK SCHEDULE :
Scheduled times / shifts may differ for weekend work, plant shutdowns and peak season production. Will be required to follow Sanitation schedule on weekends and non-production periods. Need to be flexible to last minute overtime requirement.

Ability to add and subtract two digit numbers and to multiply and divide with 10's and 100's. Ability to perform these operations using units of American money and weight measurement, volume, and distance.

Ability to apply commonsense understanding to carry out detailed written and oral instructions. Ability to deal with problems involving a few concrete variables in standardized situations.
PHYSICAL DEMANDS
While performing the duties of this job, the employee is regularly required to stand, walk, handle tools or controls.
