Regional Chef, Pollak Innovative Management
Responsible for managing / overseeing the production, operation, and sanitation aspects of all Pollak culinary and stewarding operations throughout multiple facilities and venues.
Regional Chef ESSENTIAL FUNCTIONS
People and product-focused hands-on management of day-to-day operations of all food outlet kitchens. Implements and enforces all departmental and organizational policies and procedures. Assures staff compliance with all standards, policies, and procedures.
Leading staff with proper communication skills and composure. Managing associates utilizing Dietary Managers and Cooks through planning and scheduling of work assignments and performance development. Administers corrective counseling process, training, and development.
Maintain standards of quality, consistency, costs, eye appeal, and overall flavor. Preparing and portioning hot and cold menu items according to the proper menu and recipes as noted on the production sheet counts. Label, wrap, and date all unused food items in the correct areas.
Direct interaction with high-level clients. Regular resident and facility employee interaction to ensure residents are satisfied and being provided correctly.
Provide information to create annual budgets and ensure all fiscal responsibilities are met. Plan holiday menus, maintaining financial responsibility for the menu mix. Analyze menu and food costs and the preparation of cost and quality-efficient menus / specials. Prepare reports regarding food and menu analysis.
Oversees inventory management to ensure all outlets are adequately supplied at all times. Performs periodic inventory. Requisitioning and purchasing. Maintains effective vendor relationships. Assist in placing food orders and putting away the food order
Restock items as needed throughout the shift
Oversees the sanitation standards of all kitchens to ensure compliance with local health department standards, company standards, and state requirements. Maintain a clean and organized work environment. Assure all correct food and equipment temperatures are being recorded by meal.
Responsible for the operation of the kitchen facilities in the absence of the Unit Manager and Regional Director of Operations. Operate standard kitchen equipment safety and efficiently
Perform related duties as assigned by Management . Support and follow Pollak Innovation Management and Facility Policies and Procedures.
Regional Chef QUALIFICATIONS
To perform this job successfully, the candidate must be able to perform each essential duty above at the highest levels. The requirements listed below are representative of the knowledge, skill, and / or ability required.
The ideal team member will have a degree or certification from an accredited culinary arts institute, or apprenticeship certification from the American Culinary Federation. Must be Serve Safe Certified or able to earn within the first 90 days of starting.
At least three (3) to five (5) years of experience as an executive chef in a high-volume food industry, preferably health care or senior living.
Proven track record in improving kitchen efficiencies, quality, food, and labor costs. Critical problem-solving skills
Must have excellent managerial, financial analysis, team building , and communication skills / customer service.
Self-motivated, team player. A keen ability and desire for team development. A “do-whatever it takes” attitude and strong leadership skills
Must have knowledge of kitchen sanitation, operation , and maintenance of kitchen equipment. Maintains the highest standards of sanitation and safe work environment
Must be detail-oriented and extremely organized with the ability to learn new programs and procedures quickly.
Must be proficient on Microsoft Word, Excel, and PowerPoint.
Must be flexible to work extended hours due to business requirements including nights, weekends and holidays.
Must be open to providing incidental or short-term support to other facilities in the event of a business emergency. Punctual, adaptable, passionate
Travel may be required.
