What are the responsibilities and job description for the Chef de Cuisine position at Popina?
Popina is a neighborhood restaurant with destination worthy dining. Located in Cobble Hill/Carroll Gardens--Popina is a neighborhood focused on community. We strive to give the best food, drink, and hospitality in a relaxed and casual environment. While pasta is a huge part of our restaurant--we have a small and diverse menu that changes with the seasons.
Summary of Position
Popina opened in 2017; so there's some staple menu items; but the rest of the menu changes & evolves. We pride ourselves on serving great, responsibly sourced product and present it in new and creative ways. We have long and trusted relationships with our vendors to supply us with the best of the best from local farms to fisherman. The CDC at Popina is responsible for curating the culinary experience for our guests as well as managing the back of house operations, team members, and finances. This position is key in creatively contributing to our seasonal menus, programming, community relationships, and more.
Responsibilities will include:
Menu Development

- Develop new recipes to feature on the dinner menu
- Organize and track food costs in line with financial goals
- Train staff on execution of our full menu offering
- Report on new specials, changes, and quality assurance to management, front of house staff, and cooks
Kitchen Operations
- Manage day-to-day kitchen operations including inventory management, ordering, and team scheduling
Food Safety and Compliance
- Ensure compliance with all health and safety regulations
- Maintaining a clean and organized kitchen environment at all times
Vendor Relationships
- Establish and maintain strong relationships with our vendors and suppliers
- Review and manage invoices received from vendors
- Source new vendors regularly to ensure competitive pricing
SUPERVISES: Line Cooks, Prep Cooks, Porters, and FOH
Education/Experience
- 3 years’ experience in a Culinary leadership position
- Full understanding of culinary techniques
- Strong leadership skills
- Excellent knife skills
- Good organizational skills
- Ability to manage and supervise multiple teams at the same time
- Ability to train and teach

Salary : $70,000 - $95,000
