ABOUT THE CULINARY DIRECTOR
The primary responsibilities of this position are to document and establish processes for menu development, menu creativity, culinary standards, culinary practices, and overall cleanliness standards of all concepts within the company.
TO BE SUCCESSFUL YOU MUST
- Build, manage, and maintain relationships with vendors to source quality products
- Manage the supply-chain process with vendors and identify appropriate channels for sustainable distribution and costs of ingredients sourced
- Document and develop the company menu change process and manage the completion of those objectives according to the timeline
- Act as a brand ambassador for the company and provide communication through various mediums with a skilled ability to connect the company Culinary vision with the communities we serve
- Actively research menu trends and translate those trends to menu enhancement through networking, learning, and hearing feedback from guests and industry peers
- Develop the reporting of specific metrics to communicate the performance of menu items, sanitation of stores, and product costs
- Manage inventory processes and systems to produce accurate inventory counting and company costs
- Create dishes that are innovative and meet company budgetary initiatives
- Design kitchens for efficiency and timing of dishes and storage of product
- Champion training programs and materials in collaboration with the Training Department to optimize knowledge, skill, and abilities of the Culinary team
- Promote a fun and positive work environment with a strong focus on side-by-side instruction and development of Culinary leaders when providing feedback
- Promotes a diverse work environment free of discrimination or harassment
- Documents and develops menu standards, processes, and recipes
- Ensures Culinary processes of quality, safety, and sanitation are being followed and practiced in all store locations
- Establishes vendor relationships for new store openings and plans the arrival and distribution channels of product

Requirements
- The position requires 1-3 years of multi-unit Kitchen Management and 3-5 years of full-service restaurant Kitchen Manager/ Executive Chef experience or equivalent experience. Internal candidates must be in good standing and free of performance issues within 1-year time-period. Combined work experience and education will be considered in decisions.
- Bachelor’s degree Hospitality, Management, or Business preferred. Culinary certifications and education is heavily considered.
- State Food Handler’s Management Certification is required
Salary : $135,000 - $155,000
