Prairie Harvest is highly regarded by hundreds of professional chefs for our customized meat cutting facility. Through our USDA and State certificates, we are able to produce any cut that a creative chef can request. We have our own dry aging program which allows us the ability to dry age up to 700 loins at a time. We dry age products such as Angus beef, Buffalo, Wagyu beef and Long Island duck. We offer sustainably raised prairie buffalo, grass-fed local lamb, organic air-chilled chicken and a wide variety of wild game, such as wild boar, pheasant, and North American elk.
Cutting Room Assistant: Ideal candidate would have an interest in learning the daily operations of the cutting department. Must follow procedures and guidelines as outlined by State & USDA inspection standards. Have the ability to be on their feet for 8 hours, dexterity along with hand and eye coordination, and concentration to focus on tasks involving knives, grinders, meat saw & various other pieces of equipment a plus but not required. Candidate would assist in packaging of completed products daily utilizing vacuum packing equipment, as well as helping with the daily clean up tasks assigned. Overall understanding of the processing and breakdown of beef, buffalo, and game items ideal but willing to train. Safety conscious, quality minded, computer skills, data entry and dependable and motivated.
Our staff works a 35-40 hour week, Monday through Friday.
