Qualifications
SYNOPSIS OF DUTIES
- Participates with the Executive Sous Chef in the selection, training and supervision of Cooks and culinary support staff.
- Schedules assigned staff according to forecasted weekly volume, adjusting staffing as necessary to conform to variances in daily volume.
- Supervises assigned staff in food preparation in accordance with standards of quality, quantity and presentation established by the Executive Chef.
- Check all food for taste, temperature, and eye appeal.
- Reviews recipes regularly to ensure maximum profitability.
- Ensures adherence to all purchasing, receiving, and storing procedures.
- Ensures compliance with cost control procedures.
- Informs Food & Beverage Supervisor as to menu changes.
- Develops the Hunter’s Club specials and the Feast of the Rock buffet menus.
- Supervises creative display of food items.
- Maintains communication with all other departments.
- Strives to keep abreast of national and local food trends.
- Posts food pictures and maintains recipes to ensure uniformity and consistency.
- Helps in other areas wherever and/or whenever needed.
- Responsible for updating and maintaining prep sheet.
- Performs other related duties as assigned or requested.
- Ensure all food temperatures are followed both cold and hot.
- Serve Safe Certification & Food Handlers Training.
- Maintaining Title 31 Compliance accurately.
- Other duties as assigned.
REREQUISITES
General: Must be age 21 or older. Must qualify for Tribal Non-Gaming License.
Education: High School diploma or GED preferred but not required. Degree from a post-secondary culinary arts training program is desirable. Must be able to communicate in the primary language used in the workplace.
Experience: A minimum of 3 years in food preparation and demonstrated supervisory skills.
Physical: Must be able to stand and exert well paced mobility for periods up to four (4) hours in length. Must have the ability to lift pots, pans, and other items up to 50 pounds in weight. Requires normal vision, including color acuity and depth perception, reaching, bending, stooping, grasping, finger dexterity, and hand/eye coordination. Must be able to perform safely and effectively in conditions of wet floors and temperature extremes.
