What are the responsibilities and job description for the Food Inspection Sorter (Evisceration Process) position at Prestage?
General:
The food inspection sorter is responsible for inspecting turkeys to determine food safety defects at set line speed. This critical position ensures a top-quality product is safely delivered to internal /external customers. Primary responsibilities include inspection whole / parts of large birds & dispositioning defects for removal and correction. General duties may include: cutting, inspecting, & occasionally handling of birds. The position reports to the 1st Processing Manager w/ primary work schedule of day shift, Mon. - Thurs. 7am - 5:30pm, with flexibility to work early/ late shift, short notice overtime, and weekends, as needed.
Specific Duties / Responsibilities:
- Concisely communicate with leads, supervisors, co-workers and QA on bird conditions that may affect food safety, e.g., fecal contamination
- Distinguish shades, colors, texture, & other quality indicators of bird wholesomeness
- Safely uses tools, e.g., knives & scissors to prepare birds for further processing
- Work within GMP, food safety, & USDA guidelines to achieve top quality targets
- Complete on-going housekeeping to meet food safety standards
- Willingly learn new skills, cross train others, and work to improve process flow
- Operate with a safety-first mindset at all times above all other department metrics
- Perform other assigned duties as directed
Education:
- High school diploma or GED (Min.);
Experience:
- Working knowledge / experience in raw food processing or related field
- Knowledge of poultry anatomy inspection (preferred / not required)
Skills/Abilities/Attributes:
- Solid understanding of food safety compliance protocols (preferred/ not required)
- Detailed-oriented; self-directed; able to work in fast-paced environment
- Team player; excellent communicator; courage to respectfully challenge, & ability to maintain good working relationships across various levels;
Physical Requirements:
- Properly inspect birds while withstanding distinct odors, blood, intestinal components, etc.
- Able to see up close, at a distance, to distinguish colors w/ good depth perception, peripheral vision, & focus;
- Stand, walk, bend, kneel, climb, stoop or sit for extended periods; perform repetitive tasks in a hot cold, wet environment w/ varying temperatures (e.g., 35-40 / 100 degrees)
- Exercise strong hand-eye coordination using a sharp tool & handling whole & parts of birds
- Lift / move up to 45 lbs.; occasionally 50 lbs.
