As the School Chef, you will be responsible for:
- Preparing daily morning and afternoon snacks, a well-balanced lunch and setting breakfast for up to 150 students and staff in a galley-style kitchen utilizing convection oven, steamers, griddle and skillets
- Preparing and providing alternatives snacks and meals for children who have allergies and dietary restrictions
- Planning and publishing the weekly School menu in print and via email
- Ordering foods and related supplies from multiple vendors weekly to support the menu and food service operation, calculating needed product accurately and avoiding waste and over-ordering
- The disposition and stocking of ingredients, rotating stock using FIFO method
- Maintaining kitchen safety and sanitation, including equiptment and appliances in accordance with Larimer County Health Department regulations
- Follow daily, weekly and monthly cleaning procedures including daily washing and sanitizing of all dishes and production equipment using a manual cleaning method.
- Closing the kitchen each day following proper protocol including floor cleaning and trash removal.
- Launder aprons, towels and mop heads using in-house laundry facility.
- Host quarterly county health department inspections, correcting any issues noted in a timely manner.
Qualifications:
- Proven experience in safe and sanitary food preparation in accordance with Colorado’s county health department regulations
- Ability to produce and serve pleasing, appetizing and nutritious meals on-time based on a set service schedule
- Kitchen management experience, including supervision and guidance of kitchen assistant(s)
- Strong skills in inventory management and cost controls
- Ability to manage food service and catering operations using ServSafe food handling method
- Knowledge of dietary requirements and experience producing alternative options with similar nutritional content and proportions
- High school diploma/GED
- Previous experience in educational or institutional, commercial food preparation
- Formal Culinary program training, desirable
