Job Overview:
As a Brewer/Cellar Operator, you will play a key role in the day-to-day brewing operations at PromisedLand Brewing Company. You will work on brewing, fermentation, quality control, canning line operations, keg cleaning, line cleaning and packaging. The ideal candidate will be highly detail-oriented, safety-conscious, and efficient while working in a fast-paced environment. You will be responsible for maintaining brewing equipment, assist with managing brewing schedules, and ensuring quality control of the crafted beers.
This is a full-tim or part-time, on-site, non-exempt position that offers a competitive hourly wage and growth opportunities.
Essential Functions - Level I:
Brewhouse Operations:
- Mill grain and stage recipes accurately.
- Handle mashing, lautering, boiling, whirlpooling, knockout, and grain-out processes.
- Perform full brewhouse CIP, including Heat Exchanger.
Cellar Operations:
- CIP and sanitation of fermenters and brite beer tanks (BBT).
- Conduct tank transfers and yeast management, including harvesting and pitching.
- Monitor gravities, fermentation, and record appropriately.
- Dry-hop and fine fermenters.
- Measure dissolved oxygen (DO) and CO2 in beer using Anton Parr CBox.
- Maintain general brewery cleanliness and safety protocols.
Packaging Operations (Occasional):
- Assist on the packaging line as needed.
- Help with keg washing and kegging beer when required.
Quality Assurance Operations:
- Monitor pitch rates, gravity measurements, DO measurements, yeast viability, and taste panels.
- Ensure quality control at all stages of production and packaging.
Other Responsibilities:
- Uphold PromisedLand’s quality standards and maintain a clean work environment at all times.
- Safely operate a forklift and dry-hopping lift.
- Record detailed metrics of materials and processes used.
- Perform other duties as assigned.
Job Requirements:
- Experience in brewing, fermentation, and quality control is highly preferred.
- Knowledge of different beer styles and brewing techniques.
- Ability to work in a fast-paced brewing environment.
- Strong attention to detail and cleanliness in brewing processes.
- Physical ability to lift heavy equipment and ingredients.
- Strong communication and teamwork skills.
- Experience working in a craft brewery is a plus.
- Brewing certifications or courses are beneficial.
- Must be at least 21 years old and authorized to work in California.
- Punctual, regular attendance, and a positive attitude are essential.
- Reliable transportation is required.
Physical Requirements:
- Must be able to bend, kneel, crouch, twist, and stand for long periods.
- Lift up to 55 lbs regularly and maneuver 160 lbs.
- Safely handle hazardous chemicals.
- Operate complex machinery and equipment.
- Ability to work at heights using a ladder.
- Exposure to extreme temperatures (hot, cold, wet) within the brewery.
- Work in a noisy environment, requiring protective hearing measures.

Work Environment:
PromisedLand Brewing Company is a fast-paced, physically demanding work environment. You’ll be working around heavy equipment, fluctuating temperatures, and sometimes outdoors for deliveries and tasks. The brewery can be hot, cold, wet, and noisy, so appropriate safety and protective gear will be required.
