We are looking for a General Manager/Executive Chef hybrid to oversee the food service at the Memphis Sports and Event Center. The Memphis Sports & Events Center features indoor basketball and volleyball courts and is adaptable for other sports like wrestling, gymnastics, cheerleading, futsal, and more, as well as convocation, and commencement events. The Center also includes two cafe and a concessions areas while also offering catering and high volume boxed meals.
Responsibilities:
We are looking for a General Manager/Executive Chef hybrid to oversee the food service at the Memphis Sports and Event Center. Responsibilities:
- Maintain and develop the client, vendor, and new business relationships.
- Lead the execution and details of day-to-day café food service operations and assisting with overseeing the team and logistics during catering events.
- Total execution of events and food service while maintaining the highest level of food quality and presentation
- Be an onsite leader during food service times.
- The cafe operates 5-7 days per week.
- Catering events are typically over the weekends and are frequent throughout the month
- Managing the team that is scheduled to run each food service time.
- Purchasing and inventory management for all operations
- Meets venue financial objectives by forecasting requirements; preparing an annual budget; scheduling expenditures; analyzing variances; initiating corrective actions.
- Create weekly financial reporting, to include declining balance, invoice tracking and labor vs. sales reports
- Develop, implement, and communicate creative menu items that adhere to the Proof of the Pudding standard of innovation and excellence
- Manage financial goals and food cost while maintaining and tracking the venue’s budget
- Ensure the client is communicated with and checked in on throughout the event.
- Perform on-the-job training of new employees ensuring all staff is set up for success.
- Attending and executing each assigned event to ensure that it runs smoothly from the set-up to the break-down.
- Assisting in post-event tasks including inputting payroll and inventory as directed.
- Performs other related duties as needed.
Qualifications
Required Qualifications:
- 3 years in a lead food & beverage role, back of house leadership or equivalent
- Management within fast food or high volume fast causal dining will translate well to this role
- Must be a natural leader with a fire in their belly to lead and love what they do.
- Must be a food & beverage professional who thrives on creativity, customer satisfaction and flavor profiles
- Must have impeccable integrity for the business, the community and the Proof of the Pudding Team.
- Knowledge of Microsoft Office, internal and external email communications, and purchasing procedures
Work Environment
The work environment for this position will mainly be food & beverage operations located within the Memphis Sports & Events Center. This position will often move throughout the venue, kitchen, food service areas. Events may take place in indoor or outdoor settings.
Physical Demands:
- Prolonged periods of moving through an event space, and traveling throughout the large venue.
- Bending, lifting, scooping, and carrying miscellaneous equipment and food items
- Ability to perform physical tasks; such as but not limited to, lifting approx. 30 lbs.
