We are currently seeking an Executive Sous Chef for Wake Forest University Athletics located in Winston Salem, NC to provide strong culinary leadership for premium hospitality, concessions, and catering operations. The Executive Sous Chef is charged with assisting in the general oversight and leadership of all aspects for food and beverage execution. The Executive Sous Chef will provide hands-on leadership to ensure all aspects of the kitchen performs, operates, and delivers culinary creations that exceed guest expectations, while revenue is maximized, and expenses are effectively controlled.

Responsibilities
- Execution of premium culinary operations including planning, ordering, menu creation, and execution of all game day and event menus.
- Football – 7 games per year
- Premium Hospitality: 26 suites 2 VVIP suites, McCreary Tower Club Seats, Touchdown Club, Pollard Club, plus premium concessions offerings
- Concessions: concepts and stands may range as business demands, typical fanfare stands to upscale concessions.
- Special events and private catering opportunities
- Basketball – 35 games per year
- Premium Hospitality: 18 suites, multiple club areas
- General Concessions
- Other athletic and special events with varied food and beverage needs
- Baseball, soccer, tennis, concerts, band competitions, catering opportunities
- Football – 7 games per year
- Maintain the highest level of food quality, presentation, and consistency
- Lead to ensure proper safety and sanitation of all kitchen/food service areas
- Develop, implement, and communicate creative menu items that adhere to the Proof of the Pudding standards
- Maintain tracking and reporting of financial goals and food cost while tracking and reporting the culinary budget
- Knowledge of Microsoft Office, internal and external email communications, and purchasing procedures
- Tracking and creating schedules for the kitchen and gameday culinary staff, ensuring to communicate and remain within labor budget
- Responsible for assisting in training, accountability, and scheduling of the culinary staff
- Working with the Sales and Operations team to drive sales for the company and expertly, creatively, and flawlessly execute each event
- Creating and maintaining the overall moral of the kitchen and culinary team
- Tasks assigned by the Executive Chef
Performs other related duties as needed
Required Qualifications
- 5 years in a lead culinary role, experience in Sports & Entertainment/Stadium premium catering is necessary
- A degree/training in the culinary arts, hospitality management, or equivalent.
- Knowledge of Microsoft Office, internal and external email communications, and purchasing procedures
- Must be a leader looking to grow themselves and a team.
- Must live near or be willing to relocate to Winston Salem, NC.

Work Environment
This position breakdown will include both in office work and kitchen responsibilities. Office work entails computer usage, interdepartmental meetings and communications via email, phone, and in person. Kitchen duties can include using standard kitchen equipment, bending, lifting, pushing, carrying, and moving products, food items, and equipment. Job duties may include movement between indoors, outdoors and structures throughout the campus.
Physical Demands
- Prolonged periods of sitting at a desk and working on a computer.
- Prolonged periods of standing, moving throughout a kitchen and venue, bending, lifting, and reaching.
- Ability to perform physical tasks; such as but not limited to, lifting approx. 30 lbs.

- This is considered a full-time salaried position
