Job Description
The Bar Manager is responsible for overseeing the operation and management of all bars within Proper Hotel, ensuring an exceptional guest experience that aligns with our luxury lifestyle brand. This role encompasses managing the bar staff, developing creative beverage menus, maintaining high standards of service, and driving profitability while ensuring compliance with health and safety regulations.
Key Responsibilities
Leadership and Staff Management:
- Recruit, train, and manage bar staff, ensuring a high standard of service and professionalism.
- Create staff schedules, ensuring adequate coverage for peak times and events.
- Conduct regular performance evaluations and provide ongoing feedback and coaching.
- Assist Barbacks and Servers in their job functions to ensure smooth and efficient service to guests.
- Attend pre-shift /lineups and provide operational feedback
- Develop a training program for colleagues to improve their knowledge of spirits, cocktails and techniques how to sell.

Operational Excellence:
- Oversee daily operations of Peacock, Peacock Lounge, Goldie’s, Quill Room and In-Room Dining, ensuring smooth and efficient service.
- Assist La Piscina with liquor ordering and special activations.
- Monitor and maintain cleanliness, sanitation and organization of all hotel bar areas.
- Maintain inventory levels for all bar supplies, including liquor, beer, and other beverages, and conduct regular stock takes.
- Responsible for ordering, receiving, inventory, organizing and selling wine for all outlets.
- Oversees all liquor, beer and NA purchases and cost management.
- Negotiate purchase prices with vendors.
- Control costs and maximize profitability, implementing cost-effective measures without compromising quality.
- Arrange bottles and glasses to maintain an attractive display.
- Assist with monthly inventories.
- Establish weekly maintenance program and cleaning schedule, create the check list.
- Legibly document maintenance needs and submit to Dir of Engineering.
- Support banquet events as needed.
Beverage Menu Development:
- Curate and develop innovative beverage menus, including signature cocktails, spirit selections, and non-alcoholic options, reflecting current trends and guest preferences.
- Create the recipes, spec sheets and lookbooks of all the signature cocktails in all bars and Peacock restaurant
- Clearly communicate on daily basis all updates made to cocktail lists, orders and garnishes.
- Attend menu and cocktails development as scheduled
Guest Experience:
- Ensure that all guests receive exceptional service and have a memorable experience at the bar.
- Address guest inquiries and complaints promptly and professionally, always striving to exceed expectations.
- Organize and promote special events, tastings, and themed nights to enhance the guest experience and drive revenue.
Compliance and Safety:
- Ensure compliance with all local, state, and federal regulations related to alcohol service, health, and safety. (TABC)
- Maintain complete knowledge of and comply with all departmental policies/service procedures/ standards.
- Maintain complete knowledge of and comply to Proper Image, Proper grooming standards and Proper Uniform policies.
- Maintain awareness of noise, music, and lighting levels in hotel areas and report discrepancies to Manager.
- Monitor and maintain cleanliness, sanitation and organization of bar top, tables, service areas and bar itself.
- Implement and maintain hygiene and cleanliness standards in all bar areas.
- Conduct regular training for staff on responsible alcohol service and safety protocols.
Marketing and Promotion:
- Collaborate with the marketing team to promote bar offerings through various channels, including social media, hotel events, and partnerships.
- Monitor and analyze sales trends, guest feedback, and market competition to identify opportunities for growth and improvement.
Qualifications:
- Experience: Minimum of 3-5 years of experience in bar management or a similar role within a luxury hotel or fine dining environment.
Skills:
