About Cutalong at Tributer Resort
Located in Mineral, Virginia, Cutalong at Tributer Resort spans 1,000 acres bordering Lake Anna and is poised to become a premier destination in Virginia. The development plan includes residential entitlements, featuring estate homes and homesites, executive homesites, cottages, villas, townhomes and luxury condominium accommodations. The resort's planned amenities include a spa & wellness center, multiple restaurants, social and conference meeting space and a rich array of resort activities all anchored by the prestigious Cutalong Golf Club.
Position Overview:
The Food & Beverage Director will be a key member of Cutalong's management team, providing thought leadership and strategy overseeing all front of house (FOH), food, and beverage departments. This position drives profitability through revenue generation in various food and beverage outlets, cost control, guest satisfaction and associate engagement.
Key Responsibilities:
- Oversee day-to-day operations of the food and beverage department, ensuring all activities run smoothly and efficiently
- Responsible for the selection, training and development of all front of house (FOH) and beverage team managers and staff as it relates to the organizational chart and establish labor planning guidelines
- Responsible for ongoing operations, refining operating standards and practices as needed based on business conditions and seasons
- Collaborate with chefs and kitchen staff to develop, plan, and update the menu, ensuring a variety of high-quality dishes that cater to customer preferences
- Preparing all financial reports from annual budgets to monthly forecasting, meeting all goals and objectives set annually
- Develop FOH & beverage Standard Operating Procedures (SOP's)
- Research, plan, and budget for FF&E and OS&E
- Maintain all food and beverage revenue records, daily reports, etc
- Establish vendor agreements and relationships
- Work with the Cutalong executive team to re-forecast opening budget and proforma
- Consult regularly with the Executive Chef to assure the highest level of staff and guest satisfaction
- Lead decision making for all operating systems including POS, Reservation, CC Processing, Music, Event Management, HR, Website, Social, Computer and Office equipment
- Create, plan and oversee the pre-opening and soft opening events
- Coordinate special events from a food and beverage perspective
- Develop and implement cost saving and profit enhancing measures
- Active in branding needs such as digital, paper, packaging and operating supplies while working with the marketing team to promote food and beverage offerings, including creating promotional campaigns and partnership
Qualifications:
- 5 years in high-level management required in a fast-paced upscale food and beverage operation; ideal candidate has management experience in hotels, resorts and fine dining settings
- Degree in Hospitality, Business/Administration, Restaurant Management, Culinary, or Food Service management
- Impeccable leadership and communication skills, both written and verbal
- Cutting edge technical food & beverage knowledge
- Knowledge of business and management principles involved in strategic planning
- Strong leadership track record
- Knowledge of popular reservation systems
- Experience with Microsoft Office, Google Suite etc.
- Experienced with principles and processes for providing customer and employee services
Physical Requirements:
- Most work tasks are performed indoors with some outdoor activity
- Position requires walking and giving direction most of the working day
- Requires grasping, writing, standing, sitting, walking, repetitive motions, bending, climbing, listening and hearing ability and visual acuity
