- Regular and consistent attendance.
- Exceptional guest service skills.
- Preparing designated menu items using approved recipes, portions and plate presentations.
- Bias understanding of controlling food costs and demand for individual food items.
- Operating, preparing and cleaning all food preparation equipment, prep stations, and general kitchen areas.
- Proper use of cleaning materials.
- Ensuring inventory rotation through FIFO method.
- Proper use of storerooms.
- Knowledge of kitchen opening, closing and in between show procedures.
- Emergency, evacuation and robbery procedures.
- Knowledge of local, state and federal food safety and sanitation laws.
- Dress code compliance.
- Federal and state law compliance regarding breaks and meal periods.
- Completion of Cast Certification Program or progress towards completion.
- Understanding training materials on sexual harassment and discrimination.
