Job Summary
At Richelieu Foods we are making Great Food from Great People. We are looking for an experienced Bakery Lead who is comfortable driving transformation while reinforcing a culture of support and development.
Our Bakery Lead ensures timely and accurate production in accordance with customer specifications and company standards. Oversee the entire manufacturing process, with a focus on safety and consistently producing the highest quality products possible for our customers. This role supports the Bakery Manager by coaching production associates, serving as an expert on production processes and procedures as well as a trainer for new employees and refresher training.
ESSENTIAL FUNCTIONS:
- Follow specification bundles to program mixer to add the desired amount of water, flour and oil.
- Weigh minor ingredients and visually inspect for foreign material.
- Follow specification bundles to program and adjust divider to deliver target dough weight.
- Set intermediate proofer for appropriate dwell time.
- Calibrate press to correct temperature and time.
- Fill in for operators for cross-functional training.
- Performs various duties including, but not limited to safe operation of (mixers, divider, press, etc.), mixing ingredients, moving and/or stacking materials and equipment used in the production of fresh baked products.
- Record correct lot numbers & quantities for traceability. Record and document product attributes, with a focus and emphases on hitting target specifications to ensure process control.
- Lead team to meet or exceed departmental productivity levels. Train others to perform bakery activities and functions.
- Have familiarity with entire product line as well as assisting in maintaining accurate inventory levels for finished goods, raw materials and WIPs.
- Assists maintenance to make any/all repairs to equipment.
- Perform proactive maintenance on a routine basis to identify and eliminate any mechanical issues that can cause downtime.
- Perform repairs necessary to support equipment needs and production throughputs & efficiencies. Remove all tools and debris from maintenance activities in the bakery.
- Follows and enforces food safety and food quality plans to ensure compliance with Good Manufacturing Practices (GMP) Standards and audits.
- Acts with a continuous improvement mindset with a focus on improving efficiencies while decreasing waste.
- Receive flour deliveries, following unloading flour process from proper verification of paperwork and:
- Inspect seals on flour delivery truck (with QA employee) before accepting the delivery.
- Monitor flour delivery, until completed.
- Complete EOS and QA inspections.
- Performs other duties as assigned by the Manager.
BASIC QUALIFICATIONS:
- 2-3 years experience in a food manufacturing environment
- High School Diploma or GED required.
- Must be able to measure ingredients and follow written instructions.
- Must have experience working with Good Manufacturing Practices (GMP).
- Must have experience with quality and hygiene requirements common in food manufacturing.

WORK ENVIRONMENT:
While performing the duties of this job, the employee is regularly exposed to moving mechanical parts. The employee is frequently exposed to wet and/or humid conditions. The employee is occasionally exposed to high, precarious places; fumes or airborne particles; toxic or caustic chemicals; risk of electrical shock; and vibration. The noise level in the work environment is usually loud. The work environment is cold (30 to 35 degrees) on the manufacturing floor.
PHYSICAL DEMANDS:
While performing the duties of this job, the employee is regularly required to stand for the duration of the production shift; talk or hear; use hands to finger, handle, or feel; and reach with hands and arms. The employee is frequently required to walk. The employee is infrequently required to sit; climb or balance; and stoop, kneel, or crouch. The employee must regularly lift and/or move up to 10 pounds, frequently lift and/or move up to 50 pounds, and occasionally lift and/or move more than 70 pounds with assistance.
