Dining Operations Manager Manages all day to day aspects of healthcare food service (and Assisted Living, where applicable) operations within the facility. Ensures the delivery of a quality dining experience as well as meeting the nutritional needs of the residents we serve. Responsible for meeting all aspects of CMS, State and local health codes. Able to lead and engage a diverse team, providing the necessary training required for them to execute specific position requirements while assisting them to work toward their full potential.
What you will do
- Demonstrates effective and efficient management of daily operations of healthcare (and Assisted Living where applicable) resident meal service. Takes responsibility for ensuring team is following production and recipe guidelines to reduce and/or eliminate waste, under-production, and a consistent final product. Demonstrates the ability to follow therapeutic menus/recipes to ensure residents receive consistent and quality nutritional care as ordered by their physician. Ensures employees follow proper portion control when serving residents.
- Responsible for the consistent use of RHS System and Food & Nutrition specific orientations/competencies and training. Develops/updates workflow processes, assignments of work tasks, supervision, and staffing of direct reports. Ensures team follow guest service protocols when serving residents in Dining Rooms. Leads team huddles to maintain open lines of communication.
- Demonstrates the ability to maintain food costs and inventory levels. Coordinates purchasing activities to support resident dining. Responsible for monitoring/reporting all food/supply/nutritional supplements (as applicable) distributed to other departments, and completing the monthly billing process (where applicable).
- Coordinates payroll functions to include time verification, sign off, payroll inquiries to minimize payroll adjustments.
- Assists in the development of annual operating budgets based on volume, goals, and past performance metrics. Monitors budget performance monthly and justifies all discrepancies in actual performance to budget.
- Reviews labor hour resources and evaluates regularly to adequate staffing to meet the scope of the department.
- Assists senior leadership in identifying the need for new programs, equipment, or systems and incorporating them into the strategic plan. Assists in developing a capital replacement plan and adjusting as needed to maintain, replace, or purchase capital equipment.
- Develops and maintains working relationships with clinical team toward the goal of meeting and exceeding the resident experience. Collaborates with the Food & Nutrition System team and Director (where applicable), Registered Dietitian, and culinary team (where applicable), toward the goal of optimizing the food service to residents. Ensures all residents meal orders/requests are obtained to the resident’s satisfaction and in accordance with prescribed diet orders. Frequently rounds and meets regularly with residents to discuss concerns, dietary needs and preferences, and in conjunction with the Activities Department; plans special events (where applicable).
- Ensures safe food handling protocols set forth by regulatory guidelines. Completes assigned kitchen audits to review actual to regulatory compliance.
- Utilizes Food Service and EMR (interface) software in the process of menu development, menu and tray card or ticket printing (as applicable), resident meal order taking and resident management of diet orders, allergies and food preferences.
Qualifications
Education
- High School Diploma or GED, (Required)
- Bachelors Degree, Healthcare, Hospitality, and/or Related Field (Preferred)
Experience
- 5-6 years Recent relevant experience (Preferred)
- 2 years Supervisory experience (Preferred)
Licenses and Certifications
- Allergen Awareness Certification - VA State - ANSI-approved Allergen Awareness certificate program within 180 Days(Required)
- Food Protection Manager - VA State - ANSI approved Food Protection Manager Certification - VA State within 180 Days(Required)
- Certified Dietary Manager Certified Food Protection Manager (CDM CFPP) - Association of Nutrition & Foodservice Professionals (ANFP) (Preferred)
