Job Description:
The Pastry Chef oversees the bakery operations for all facets of the catering operation, including (but not limited to) methods of preparation, departmental processes and SOPS, recipe development, and R/D for all catering applications. Additionally assisting with leadership and mentorship of a team and displaying ALL Rocky Mountain Catering core values.

ESSENTIAL DUTIES AND RESPONSIBILITIES:
- Responsible for training, leading, and motivating pastry cooks and other culinary staff.
- Cross utilize teams to cover all needs of the operation
- Insure all HACCP procedures are followed
- Innovate and create new features within the pastry department
- Create displays, showpieces and seasonal attractions
- Recruiting, selection and on-boarding of pastry chefs and cooks
- Responsible for scheduling, staffing, and controlling food and labor costs to meet budgeted and forecasted expense margins
- Discipline staff as necessary in accordance with company guidelines and procedures
- Staff bake shop in line with current structure model and to meet the seasonal volume needs of the outlet
- Work with event designers and management for timely and smooth event execution and high-level guest satisfaction
- Personally participate in cake tastings with wedding clientele to deliver a wedding cake that exceeds their expectations
- Maintain serve safe certification and records for culinary employees making sure all are current in their training
- Routinely and proactively assess property and culinary equipment and maintenance needs
- Maintaining exemplary cleanliness and adheres to local and state health department requirements
- Liaises with purchasing and stores to ensure prompt and efficient purchasing, issuing of supplies, stock control and inventory control
- Always adopting a positive attitude and keeping the team spirit at the highest level
- Responsible for the correct timing during service and to ensure that food served is always of the highest standards
- Updates menu recipe cards and menu planning for current operations.
- Responsible for the hygiene and cleanliness of his/her assigned kitchen
- To report to the Executive Chefs on all staff and operation matters
- Monitors / approves all staff issues who reported to him including overtime, change of shifts, staff leave
- Ensure product consistency
- Assist the Executive Pastry Chef with day-to-day supervision of bakery team members, including making hiring recommendations, disciplining and coaching team members, and delegating workload and projects
- Assist with payroll as required
- Perform other tasks or projects assigned by management
EDUCATION AND EXPERIENCE REQUIREMENTS:
Diploma/ Degree in Hotel & Food Preparation Management. At least 3 to 5 years working experience in a high volume F&B operation

WORK ENVIRONMENT:
Most of the work is conducted at headquarters in a building that is temperature controlled. There are times that you will be working outdoors including seasonal weather.
PHYSICAL DEMANDS:
During the course of performing the physical demands of this position, associates are expected to observe and adhere to safety and security procedures, promoting a safe work environment.
The physical activity that you will be need to perform are:
