  • Responsible for providing meals satisfying to the residents within limitations of the budget and physical plant.
  • Has an overall responsibility to see that the production of the menus is as planned and to has continual awareness of the resident accept of all meals served.
  • Inventories of foods and supplies weekly. Review special needs with the Administrator Determined needs and places all orders with preferred vendors for food and supplies.
  • Maintains all cost within budget guidelines. Utilizes budget/expense management system and reports status weekly during leadership meetings.
  • Oversees deliveries as to the proper quantity, quality and storage of all foods and supplies for dining services.
  • Checks invoices for accuracy. Invoices to be approved coded and turned into Administration the first of each week.
  • Inaccurate invoices shall be resolved with the vender.
  • Keeps a census of all residents, guests and employee meals.
  • Makes available to all production and serving staff the recipes and correct portion servings for all food items to allow control for nutritional adequacy and cost control.
  • Is responsible or having all meal service completed at the designated hour of service.
  • Is responsible for the quality and temperature of all foods offered on the serving line. (Temperature to be recorded according to policy).
  • Responsible for the enforcement of sanitation standards of the department per dining services policies and procedures.
  • Sets the example for good sanitation and provides instruction and direction to dining service employees to uphold the standard of sanitation that is desired. Completes a share of the cleaning and organizing needs for good sanitation.
  • Trains employees in proper food handling techniques handling, storage and cooking of meat, fish and poultry.
  • In conjunction with the Administrator, completed a weekly sanitation check; from this, prepared and updates as needed, the special cleaning assignment that distributes responsibilities among the dining service employees.
  • Inventories and sees that adequate cleaning supplies are provided.
  • Maintain adequate files and employee information as required to meet OSHA standards for hazardous industrial materials and other state and federal rules.
  • Responsible for the supervision of Dining Service employees.
  • Works with the Administrator and Business Office Manager when recruiting and hiring is necessary.
  • Interviews and evaluates dining service applicants to find the best employee for the position.
  • Relays observations and information to the Administrator regarding employee’s performance that will be useful in the hiring, firing and/or discipline of employee in fair manner.
  • Provides instruction and conducts on-the-job training for all dining service employees. Maintain an up-to-date information as to employee’s home phone number and emergency contacts.
  • Staffs the dining services appropriately to meet budget.
  • Responsible for working with menu vendor and posting menu in advance.
  • Provides additional menu options based on the availability of leftovers or other necessary menu changes for next day menus.
  • Maintains copies of as serves menus per policy.
  • Adjusts recipes, when necessary, for quantity (if too many leftovers).
  • Notifies menu company of employee and resident feedback.
  • Works with the Director of Health Services in relation to residents, dining services performance and needs.
  • Accepts responsibility for resident’s therapeutic diet needs.
  • Maintains or has access to a file of all diet prescriptions as per policy.
  • Notifies Director of Health Services regarding resident diet prescriptions that are not compatible with type of food service offered.
  • Instructs staff and nursing services as to menu guidelines (provided by menu vendors) offered that will meet their diet prescriptions. (see special diet menus).
  • Is responsible for availability of diet foods necessary to meet diet needs.
  • Attends resident service plan meetings, providing information as to resident acceptance of therapeutic diets.
  • Utilizes the Dining Services policies and procedures as the basis for the training, decisions and planning that is completed. Keeps available to the dining service employees for their review and study.
  • Make this information available to the dining service staff for their review and study.
  • Informs Administrator of all recommended job descriptions and policy changes,
  • To possess a high standard of sanitation. Having the ability to demonstrate and teach this standard and relate it to good service and safety in the department.
  • Works with software platforms such as menus, food purchases and meal ordering,
  • Supports the efforts to provide a farm to table influence per policy.
  • To perform other duties that may be set forth by Community Administrator, completing all assigned duties which may change from time to time according to resident’s needs, staffing levels and working circumstances.

Job Type: Full-time

Pay: $55,139.00 - $60,886.00 per year
