Purpose of the Executive Chef :
The Executive Chef will help to create meals and train employees on different positions. They will help out and assist in any area of the kitchen as needed and ensure that the food being prepared is high quality and consistent.
Essential Duties and Responsibilities
Helps out on the cook line as needed.
Creates high quality food production.
Trains staff in various positions.
Oversees employees and their consistency.
Ability to prepare soup stock and other sauces.
Ability to cut meats, etc.
Ability to execute order from line in a timely manner.
Supervisory duties of at least 15 employees and delegating tasks to employees.
Works closely and maintains communication with the Executive Chef.
Assists with menu development.
Orders from various vendors.
Assists with payroll and scheduling.
Maintains labor and food cost budgets.
Other duties as assigned
Skills / Requirements
Culinary Degree and / or 3 years of Sous Chef experience.
Proficient math skills for recipes and measuring.
Must possess good knife skills.
Must possess knowledge of kitchen equipment.
Ability to establish and maintain effective working relationships as well as to gain the cooperation of guests and fellow team members
This position must have, or an ability to acquire within one year, an in-depth knowledge and thorough understanding of company policy and procedures, state regulations, and technical rules relevant to their responsibilities
Must possess the ability to obtain a Minnesota Racing Commission gaming license
Physical, intellectual and environmental conditions :
Ability to work flexible shifts and days of the week including nights, weekends and holidays
Strong multitasking skills with additional attention to detail.
Possess creativity when it comes to food specials and plate presentation.
Ability to handle frequent walking, standing, kneeling, crouching, twisting, bending and lifting, pushing and pulling. This is a very active position.
Ability to lift up to 50lbs on occasion.
Must be able to work flexible shifts in a crowded noisy environment
