Schedule: Rotating 12 hours shifts, 6pm - 6am, 2 days on, 2 days off, Every other 3 day weekend (Friday, Saturday, Sunday)

Job Summary:
This position is responsible for assisting in all areas of facility along with relieving cheesemakers. Following make schedule and staying on time to the production schedule. Monitoring ingredient inventory and milk volume during production hours. This position requires leadership skills with strict adherence to GMP, sanitation, safety, timekeeping and personal conduct rules.
Job Responsibilities:
- Assist and relieve cheesemakers, RO/UF operations, Intake and other key areas of the plant
- Conduct In-process chemistry testing with documentation
- Follow production schedule to cheese types and timing
- Operate HTST, Vats, Separators, Homogenizers and other key pieces of equipment
- Able to make adjustments during cheese make process
- Understand chemistry of cheese such as pH, Moisture, Fat and salt
- Conduct routine checks during production hours
- Review CCP/PCs for quality purposes such as HTST cut in, cut out.
- Monitor cheese make process for equipment set up, scheduling, and rotations
- Communicate safety and or quality concerns to management and appropriate staff
- Able to assist in all areas in operations when needed while understanding roles of responsibility
- Understand cream, milk, whey, RO and UF chemistry results
- Responsible for strict adherence to GMPs for all employees
- Accurate recordkeeping and specific paperwork
- Monitor process control points during production and cleaning hours
- Perform all other duties as assigned
Education and Experience:
- High school diploma or equivalent preferred
- Food manufacturing experience preferred but not required

- 18 years old

- Moderately strenuous work involving standing, walking with frequent bending, twisting, pushing and squatting; Repetitive lifting of up to 50 lbs.
- Fast-paced clean environment; frequently cool, wet, and moderate noise along with working with chemicals
