About the position :
The ideal candidate has one or more years of experience in pastry, bakery or culinary in a fine dining or upscale casual setting such as a country club, luxury hotel or fine dining restaurant. A culinary degree is desirable.
We are looking for a person who is eager to learn, experienced on reading and understanding recipes and follow proper procedures for production, keeping up with volume while maintaining consistency
The pastry cook focuses on maintaining the production of all the restaurant desserts to be in house, working from scratch and maintaining a high standard of quality and pride for what is done at the club.
This position requires an engaged and forward thinking individual, well organized and methodical, able to work in an efficient and organized manner.
The Club's pastry shop allows for creativity and participation in the menu design process to the right individual
Role Description :
Ability to work independently or as part of a team. Possess a sense of urgency. Follow established recipes and plating guide to specification.
Basic Duties & Responsibilities, (not limited to) :
- Check daily production requirements / prep list. To include all cookie doughs, corn muffins, biscuits, sponge cakes, pies, custards and any other necessary banquet production and plate ups.
- Organize & maintain their station and equipment in a clean orderly fashion.
- Communicate regularly with the Pastry Chef on inventory and pars set for baked goods.
- Produce, set up, maintain and break down weekly and holiday buffets.
- Minimize waste, practice FIFO in coolers and freezers and dry goods
- Properly label and wrap and store all baked goods.
- Practice proper sanitation and health codes for food preparation & storage.
- Work schedule varies depending on business demands.
