What are the responsibilities and job description for the Kitchen Manager position at Schilling Beer Company?
Overview: We are seeking an experienced Kitchen Manager with excellent references to lead our culinary team at Schilling Beer Co. The Kitchen Manager will be responsible for overseeing all aspects of kitchen operations and teamwork in our wood-fired pizza kitchen, as well as in the more traditional co-located Mill St Kitchen (same property) with a flat-top grill.
This position requires proven administrative and managerial leadership focused on running a wood-fired pizza kitchen and leading a team with excellence. Specifically, a successful candidate possesses:
- The ability to hire, fire, schedule and train kitchen staff relative to the needs and values of Schilling and its guests;
- An organized approach to ordering, inventory management, cost-control and labor planning;
- A calm, calibrated, systems-focused approach to the kitchen;
- A focus on ensuring that all back of house hygiene, cleaning and licensing are always up-to-date;
- Creativity for the pizza kitchen and menu planning (alongside the GM), as well as a specific knowledge of pizza and wood-fired oven utilization.
