The Lodge at Santa Fe and El Rey Court is searching for a dynamic leader that possesses strong Culinary skills and is ready to take the next step as our Director of Culinary and Beverage for these great properties in Santa Fe. This role will be instrumental in working alongside our corporate team in building and launching a new concept for the Lodge which will be soon undergoing a transformation and rebranding as well as supporting the iconic El Rey Court. The ideal candidate will be able to provide direction in terms of kitchen lay-out and design, help develop menu's, but also be able to prepare the food themselves.

JOB DUTIES AND RESPONSIBILITIES

  • Responsible for budgeted revenues and expenses and improves profitability related to the Food & Beverage Department
  • Prepares food according to specifications for breakfast, lunch, dinner and banquets
  • Oversee inventory for both the kitchen and bar, ordering supplies, controlling costs, and minimizing waste
  • Oversee all food preparation processes, ensuring quality, consistency, and adherence to recipes
  • Manage, train, and develop kitchen and bar staff to ensure smooth operations and excellent service
  • Ensure all kitchen and bar areas meets/exceeds federal, state, corporate and franchise standards and regulations
  • Interact with guests to ensure satisfaction, handle special requests, and resolve any issues related to food or drinks
  • Collaborates with Director of Sales on sales and marketing strategies
  • Manage bar staff, design cocktail menus, and ensure the bar area is clean, stocked, and ready for service
  • Work closely with front-of-house staff to ensure a seamless dining and drinking experience for customers
  • Perform various other duties as assigned to meet business objectives
  • Review and approve all menus and pricing in restaurant outlets and banquet/catering.

EDUCATION AND EXPERIENCE

  • Minimum of High School education, post-high school education preferred
  • Bachelors Degree in Hospitality/Restaurant Management or equivalent is preferred
  • Minimum of 3 years experience as a Restaurant General Manager or Director of Food & Beverage
  • Food Handler and Alcohol Awareness Certifications

KNOWLEDGE, SKILLS AND ABILITIES

  • Knowledge of alcohol serving practices and standards
  • Knowledge of federal and state labor laws as well as local health and sanitation laws and regulations
  • Experience in the recruiting, interviewing and hiring of restaurant, bar and culinary talent
  • Experience managing Restaurant and Bars in the capacity of Assistant General Manager or higher
  • Extensive passion for and an understanding of the Restaurant and Bar industry and proven track record of success
