Opportunity Description Seattle Central College is looking to hire a part-time Culinary Nutrition instructor for Seattle Culinary Academy. Position Summary This is a part-time, faculty position that reports to the Associate Dean of Seattle Culinary Academy and works collaboratively with other Culinary Arts and Specialty Desserts and Breads Chef Instructors, Professional Technical Advisors, Embedded Career Specialists, and industry employers. This position teaches Biology 103 - Nutrition for Foodservice. This position is part-time, teaching on Tuesdays from 2:00 - 3:50 pm, with flexible scheduling for grading and other faculty responsibilities. This position works a hybrid schedule of both remote and on-site work. This position is governed by a collective bargaining agreement with representation by AFT. What you will be working on: Instructor for Biology 103 - Nutrition for Foodservice - 2 credit course Prepare, deliver and maintain current and relevant curriculum to meet requirements for accreditation with the American Culinary Federation. Teaching the characteristics, functions, and food sources of the major nutrients and how to maximize nutrient retention in food preparation and storage. To apply the principles of nutrient needs throughout the menu planning and food preparation life cycle. Other learning outcomes include: Identify current USDA Food Guideline principles and food groups List the nutrient contributions of each food group. Discuss 2015 USDA dietary guidelines. Develop recipes and menus using dietary guideline recommendations, food guides, and food labels. Evaluate recipes and menus using dietary guideline recommendations, food guides, and food labels. Discuss characteristics, functions and best sources of each of the major nutrients. List the primary characteristics, functions and sources of vitamins, water and minerals. Describe the process of human digestion. Determine energy needs based upon basal metabolic rate and exercise expenditure. Discuss and demonstrate cooking techniques and storage principles and portion, sizes for maximum retention of nutrients and effective weight management. Discuss exchange groups. Identify common food allergies or autoimmune triggers and determine appropriate substitutions. (i.e. Gluten, sugar, lactose free). Discuss contemporary nutritional diet trends (i.e. whole food plant-based, vegetarianism, heart healthy menus and religious dietary laws) and identify methods for differentiating trends from evidence-based science. Apply emerging technologies (computerization) for nutrient analysis (i.e. Internet, recipe analysis software). Discuss marketing of healthy menu options. What you bring as a candidate: (Any Equivalent Combination of Knowledge, Skills, Abilities, Education and Experience) Registered Dietitian Nutritionist, Certified Dietitian, with minimum Bachelor of Science in Human Nutrition & Foods. A minimum of 2 years teaching experience in a school, community, or coaching setting. 4 Years knowledge/experience in the food service industry or related field.
