What are the responsibilities and job description for the Central Kitchen Lead position at Seattle Public Schools?
This position's responsibility, under the supervision of the Central Kitchen Operations Manager or designee, is to prepare/distribute food items following District procedures and standards; may substitute for the Food Services Coordinator and perform all Coordinator duties, in the Coordinator's absence.
- Prepares and monitors the preparation of attractive, high quality, nutritious, cost effective meals following standardized procedures and in accordance with established work schedules; follows production sheets and uses appropriate equipment.
- Maintains and troubleshoots kitchen equipment; adjusts and makes minor repairs.
- Schedules and supervises daily work activities in assigned food preparation areas; submits advance requests for needed food and other supplies; collaborates with other Leads to accomplish daily production needs; serves as a member of the food services team.
- Monitors sanitation methods to ensure that standards are met; maintains HACCP records.
- Maintains recipe files and appropriate records, including food production calendar.
- Supervises and assists unit employees in meal preparation tasks; conducts on-the-job training to maintain the operation of the central kitchen.
- Promotes Nutrition Services to increase meal participation.
- May act as the Coordinator in the Coordinator's absence.

- Performs related duties consistent with the scope and intent of the position.

Works under general supervision of the Central Kitchens Operations Manager or designee..

Knowledge of:
- Modern methods of food preparation, including recipe adjustment
- Acceptable product standards, including quality and sanitation
- Aspects; basic math; basic computer operation.
Skill in:
- Communicating both orally and in writing; interpersonal communication.
Ability to:
- Operate all types of commercial kitchen equipment, including a mechanical aptitude for operating/adjusting complex equipment
- Maintain organized files and records
- Establish and maintain good working relationships with a variety of employees and customers
- Work with little or no supervision
- Utilize the fundamentals of quantity food preparation
- Alter recipes correctly
EXPERIENCE:
One (1) of work experience in commercial or institutional quantity food preparation that included supervision, training and communicating effectively with staff.
